Give it a try.....I think you'll be pleasantly surprised.

    INGREDIENTS

    1 Cup of Fresh Blueberries

    5-6 Fresh Rosemary Leaves

1 TBLS of Raw, Organic Honey

    1 TBLS of Balsamic Vinegar

    2 tsp of Lemon Juice

    1/2 tsp of salt

1/2 tsp of fresh ground black pepper

    1. In a small saucepan....add the blueberries, rosemary, honey, balsamic vinegar, lemon juice and 1/2 tsp of salt.

Tampa Bay Tuesdays in Orlando at Coopers Hawk Winery Restaurant Feb 13, 2018
    Show notes

    Hey Weight Loss Nation!

    www.TheWeightLossNation.com

While at Podfest Multimedia Expo, I had the opportunity to spend time with friends and fellow podcasters for dinner each night.

Friday night, the gang selected Cooper's Hawk Winery Restaurant…..which is located at 8008 International Drive, Orlando.

When we walked in ……the place was buzzing!

The décor was pleasant to the eye and the wine tasting bar immediately caught my attention.

The Maître De was polite and very considerate to our large group.

All 12 of us were invited to the wine tasting bar while we had a short wait for our table.

Being February …..and close to Valentine's Day….the group unanimously chose "Romance Red" wine for our tasting.

I am NOT a wine connoisseur by any means. I like to occasionally drink wine and I like the Resveratrol in wine.

To me, the Romance Red wine was "pleasant." It has a maraschino cherry and spice taste to it. I think the Romance Red would have been best suited for a dessert wine, but hey…….what does a group of podcasters know about wine?

Cooper's Hawk Winery is the 31st largest wine producer in the United States, producing over 5 million bottles a year from it's winery in Countryside, Ill.

The winery has won hundreds of awards, including a pinot noir with a 99 point rating in the Cooper's Hawk premium Lux Line, won in a prestigious California competition.

Grapes used for their wines are primarily flown in from California, Oregon and the State of Washington. Some grapes are also flown in from overseas

The wine menu has many selections to choose from, which should please any wine drinker.

They also have beer, craft beer, cocktails and non-alcoholic drinks.

Again….I am not a wine connoisseur…..I felt like having Chardonnay….and there were several selections on the menu:

They had an "unoaked chardonnay" a regular chardonnay and a chardonnay from Cooper's Hawk Lux premium line.

The price per glass ranged from $7.50 to $10.50 a glass for the Lux Line Chardonnay.

    I chose the regular chardonnay.

The wine had a pleasant aroma of apples and pears…..and the taste was creamy and balanced….with a medium body and balanced acidity. Good choice!

The Food menu has a variety of items that should make anyone visiting the restaurant happy.

They have appetizers, soups, salads, burgers, sandwiches, chicken, beef, pork, seafood and pasta selections.

The thing that really caught my eye…..was the "Life Balance" section of the menu.

Each meal on the Life Balance menu is under 600 calories and is designed to accommodate people who are being "mindful" about portion sizes as well as healthy ingredients. The portions are carefully measured to ensure accuracy of the listed calorie count.

With a nice selection to choose from, including vegetarian selections, I chose the Grilled Atlantic Salmon.

I don't cook fish at home. I don't LOVE fish. I "like fish" I usually eat fish out at restaurants I believe will have fresh fish as well as prepare the fish exceptionally well.

The salmon filet was served over sautéed spinach, with San Marzano Tomato Sauce. 3 slices of Yukon Gold potatoes also comes on the plate, but I don't eat white potatoes anymore. I gave the potatoes to one of my buddies.

The salmon was "flaky" Good start. The taste was pleasant and NOT fishy at all. So…..I enjoyed the salmon. I LOVE spinach, so that was delicious.

Our server was great and I really LOVED that Cooper's Hawk had the "Life Balance" Menu.

The main restaurant is loud and crowded….as would be expected on a Friday evening. We sat on the outside patio, where 70 degrees in Orlando, Fl…..fresh air, good friends and good food is as good as it gets.

I want to thank Cara Mahler, general manager of Cooper's Hawk International Drive…..as well as her outstanding staff, who assisted us that Friday evening.

Cooper's Hawk Winery Restaurant in Orlando is open 11:00am to 9:30pm Mon – Thur and Is open until 10:30pm on Friday & Saturdays. Sundays they serve until 9:00pm

I give Cooper's Hawk Winery Restaurant a Weight Loss Nation 2 Thumbs up…..and I look forward to visiting the Tampa location this summer.

If you're looking for an "upscale" casual restaurant, with a full wine selection…..that is very good…..then try Cooper's Hawk Winery Restaurant in your State.

Are Blueberries REALLY That Good For You? S3 Ep005 Feb 09, 2018
    Show notes

    Hey Weight Loss Nation!

    www.TheWeightLossNation.com

I am not a Doctor….nor am I a nutritionist or dietician. In fact, I have no degree in health whatsoever.

I research fruits, vegetables and grains online…..just like anyone would do. Therefore…..the information I am providing you is INFORMATIONAL and for your entertainment only.

If you have a medical condition or injury and you are going on a diet or meal program, please check with your physician first…. prior to beginning any diet or exercise program.

With that said…..let's learn some things about Blueberries!

    BLUEBERRIES THE KING OF ANTI-OXIDANTS!

    HISTORY

Blueberries are "Native" to North America. We finally have a GREAT Food Representing US!

In early America, The Native Americans recognized the health benefits of blueberries using them for medicinal purposes and as flavoring in their foods.

It wasn't until 1910, that Frederick Coville, an American Botanist, discovered blueberries could only thrive in "acidic soil."

In 1911, Elizabeth White, daughter of a New Jersey cranberry farmer read Coville's Experiments in Blueberries….and invited Coville to use the family farm to partner with her in his experiments in blueberries.

In 1916 White & Coville harvested & sold the FIRST COMMERCIAL CROP of "highbush" blueberries in Whitesbog, NJ.

"High Bush" means it grows tall!......Blueberries grow on bushes that reach a height…..of about 6 to 8 feet. They also produce a larger amount of berries on the bush.

By contrast…."Low Bush" Blueberries…a.k.a. "wild blueberries" grow close to the ground….being no taller than 2 feet high. The berries are smaller and "sweeter" than "High Bush" Low Bush berries are very "hardy" plants, and do well in different types of soil and climate.

Between the years 1942 – 1962, "Blueberry Fever" swept the nation and more than 200,000 seedlings were spread across 13 states!

By 2014….Blueberry Production across 5 Continents rose to over 1 Billion Pounds! That's a LOT of Blueberries!

Within the United States….the top Four States that produce "highbush" variety of blueberries are - Michigan, Washington, Georgia and Oregon.

60% of the "High Bush" blueberries grown in those States are sold as "Fresh Blueberries" just like you buy a "pint of blueberries" in the store ….and the other 40% are converted into juices, jams or dried fruit.

The State which produces the largest amount of "low bush" blueberries is….the State of Maine.

More than a dozen U.S, States grow blueberries commercially, and all together, they produce over 550 million pounds of blueberries!

Even though the U.S. grows an enormous amount of blueberries, the majority of blueberries consumed in the U.S. is imported!

Chile and Canada supply the U.S. with the majority of imported blueberries.

    BENEFITS OF BLUEBERRIES

I've stated several times on this show…….dark colored fruits and vegetables get their color due to the Flavonoid called "Anthocyanin"

Flavonoids provide the powerful anti-oxidants and anti-inflammatory properties and ……they produce the vibrant, dark color in foods.

That means that Blueberries…..are part of our "Pac Man" Family!

No surprise there Nation! Flavonoids like…."Flavonois" and "Flavan-3-ols" are highly effective in "searching, Fighting and help in Destroying Free Radical Cells" in your body, that cause cancers.

Blueberries also contain Vitamin C, Vitamin A and with the powerful Flavonoids – they help decrease inflammation in the body and help inhibit the growth of cancer cells related to esophageal, lung, mouth, endometrial, pancreatic, prostate and Colon Cancers.

Blueberries also contain Folate. Folate plays a role in DNA Synthesis and repair. This can help prevent the forming of cancer cells due to mutations in DNA.

Blueberries also contain iron, phosphorous, calcum, magnesium, manganese, zinc and Vit K.

What a friggin nutrient-rich Fruit! You Go Blueberry!

All of those vitamins and minerals are components of bones. Iron & Zinc play Crucial roles in maintaining bone strength and elasticity of joints.

When you have a good intake of Vitamin K you will improve calcium absorption which may help reduce calcium loss or breaking of bones.

Blueberries have a HUGE amount of Vit C.

One Cup of Blueberries provides 24% of the recommended daily allowance of Vitamin C.

Vit C also is an essential nutrient and works to prevent skin damage caused by the sun.

Flavonoids have a unique relationship with Vit C, by helping "transport" Vit C throughout your body. Flavonoids also help regulate the function of an enzyme called "Ascorbate Oxidase" which converts Vit C into a NON Vitamin form.

I have no idea why that is important to the cells in your body…..but it is….so eating foods rich in Vit C and Flavonoids is important!

Blueberries also have a HIGH amount of FIBER.

One Cup of Blueberries has 3.6 grams of Fiber! Studies have shown that Type 1 Diabetics who eat high amounts of Fiber, have lower low blood glucose levels and Type 2 Diabetics who eat high amounts of Fiber may also improve their fat and insulin levels.

    HUGE benefit for Diabetics!

Fiber also will help to prevent CONSTIPATION. Fiber helps maintain regularity in the digestive tract.

Fiber functions as a "bulking agent" in the Digestive System. High Fiber also makes you feel full!

When you feel full ……you don't EAT as much! That automatically reduces your Calorie intake.

Blueberries also have Vit B6 and Folate which helps prevent the buildup of the compound known as "Homocysteine." Excessive buildup of Homocysteine in the body can damage the blood vessels and lead to heart problems.

Blueberries also contain the phytonutrient called "Resveratrol"

Sound Familiar……of course it does! There have been lots of publicized research on RED wine, which contains Resveratrol. The Resveratrol is found in the skin of red grapes…..but….Resveratrol is also found in BLUEBERRIES!

The Resveratrol is found in smaller amounts in Blueberries, but HEY……Resveratrol is an anti-oxidant and anti-inflammatory phytonutrient!

Blueberries also help nervous system responses, by protecting nerve cells from "oxidative" damage with those FREE Radical Cells. This can help with Cognitive Function……

    www.TheWeightLossNation.com

    NUTRITIONAL VALUE

Finally…… let's take a look at the actual nutritional value of just ONE CUP

    Of Blueberries!

Calorie wise……One Cup of Blueberries has about 80 calories.

There is NO Cholesterol and 1.1 gms. Of Protein.

There is 21 gms of Carbohydrates

AND …..3.6 gms of FIBER. Wooooo HOOOOO!

There is about 14 gms of sugar.

    24% of Vit C

    5 % of Vit B6

    36 % of Vit K

    9mg of Calcium

    .5 mg of iron

    114 mg. of Magnesium

    18 mg of Phosphorus

0.25 mg of Zinc and 9 mg of Folate.

Blueberries also contain copper, Beta-Carotene, choline, Vit A, Vit E

    And…..Manganese.

Blueberries are definitely the King of Anti-Oxidants !!

BLUEBERRY SEASON RUNS IN THE U.S. FROM APRIL THROU SEPTEMBER

& THEN IMPORTS FROM CHILI OCCURS FROM OCTOBER THRU MARCH, WHICH WILL ALLOW YOU ACCESS TO OUR "PAC MAN" FAMILY STAR ALL-YEAR ROUND!

Next week, I'll have a Blueberry recipe for you ….. a REAL Recipe….I'm not going to give you a recipe like adding Blueberries to your Oatmeal. NO…..I'm going to find and execute a REAL Recipe that is Easy and Healthy for YOU!

S3 Ep004 Tampa Bay Tuesdays Restaurant Review Feb 06, 2018
    Show notes

    Hey Weight Loss Nation!

    www.TheWeightLossNation.com

It's Tampa Bay Tuesday, and today I'm Reviewing the Oxford Exchange Restaurant……located at 420 W. Kennedy Blvd, Tampa, FL

The Oxford Exchange is across the street from the Beautiful University of Tampa Campus.

The Oxford Exchange is a unique building, bringing a historic flare, with a modern twist to the Tampa Bay Area.

The building was built in 1891, and is believed to have began it's history as a horse stable.

In the 1920's an Arcade of local shops and businesses occupied the space.

Brother & Sister……. Blake Casper and Allison Adams bought the building decades later, and envisioned a place where people could feel like they were part of the community and engage in conversation.

Keeping traditional architectural designs …blended with European inspiration…..the Oxford Exchange opened it's doors to the public on September 24, 2012.

The Oxford Exchange contains a vibrant, open seating area…..where guests can sip on tea from the Tebella Tea Company or coffee from Buddy Brew…..anytime.

There's a book shop, an eclectic gift shop, Aesop's Hair & Skin Products store and a Warby Parker…..Eyeglass or Sunglasses Store.

The 2nd Floor holds The Commerce Club….. a members-only shared work space as well as space for private events.

Then we have the Oxford Exchange Restaurant!

Which has two boasting areas to enjoy a meal or afternoon tea!

Guests may be seated in an art filled dining room with an open kitchen…. Or…… guests may sit in the sunlit Conservatory, complete with plants, vines and a retractable glass roof.

The menu consists of fresh and seasonal appetizers, salads and sandwhiches…..which are complemented by an array of premium coffees, teas, and cocktails.

The Oxford Exchange Restaruant is open M – F from 7:30am – 5:30pm and is open from 9:00am – 5:00pm on Sat and Sundays, with a beautiful Brunch Spread, which is available from 9:00am – 4:00pm

I ordered a Seasonal Chopped Salad with Grilled Chicken.

The lettuces on the salad are – Romaine, Spinach & Arugula….my Favorite Blend!

Dates, Pumpkin Seeds and Avocado are also on the salad……

As well as fresh Goat Cheese.

The dressing is a Citrus Cilantro Vinegrette…which I asked for on the side…since I'm not a fan of Cilantro.

For my afternoon tea…..I ordered Jamaican Ruby Red….which contains grapefruit & Eucalyptus. Never had it before!

Know what drew me to this tea? I LOVE the smell of Eucalyptus!

I also love citrusy smell, so I was hoping it would taste just as good!

My server brought my TEA first in a self-pouring pot and a white china cup.

The tea was beautiful! A Magenta colored tea and the smell was friggin awesome! Just as I had imagined!

The first thing I tasted was a mild Eucalyptus and then the citrus. Wow….I was impressed!

I decided to drink the TEA just the way it was served!

Then my chopped salad arrived and it was beautifully presented.

It looked great to me……I'm no friggin Gordon Ramsey…but I have to say it LOOKED pretty.

So pretty…….I took a picture and posted it on the FB WLN site!

I tasted the Citrus Cilantro Vinegrette BEFORE I put it over my salad and it wasn't overly Cilantro tasting!

That's good for me! The greens were fresh, crisp and peppery….just the way I like them!

The grilled chicken was cut into small bite size cubes. NICE Touch!

Avocado was creamy and the Goat Cheese was fresh too. A nice compliment to the greens.

All in all……I have to give the Salad AND the TEA….. a Weight Loss Nation 2 Thumbs Up!

If you aren't a fan of salad greens…… there are many other choices to satisfy your palate, while eating healthy at the same time.

Check out the menu at www.oxfordexchange.com

You can also contact the Oxford Exchange by calling 813-253-0222.

The service was excellent as well….My server interrupted me just the right amount of times to see if I needed anything.

The price for the chopped salad is $17.00….. a tad high, but excellent tasting!

If you're interested in breakfast, lunch or afternoon tea…… I HIGHLY recommend the Oxford Exchange for yourself, with a client or to meet a friend.

Peanut Butter is one of my favorite satisfying foods to eat.

Today, we take it for granted on how easy it is to go from the thought of… "I feel like eating some peanut butter" ……… to either walking into the kitchen and opening up a jar or having it delivered to your door within 2 hrs. by ordering a jar on Amazon Pantry.

Peanut Butter is a healthy food and we have Four Men to thank for bringing us this delicious food we enjoy today

    The four men are:

    1. Marcus Gilmore Edson of Canada,
    2. John Harvey Kellogg,
    3. Ambrose Straub of St. Louis, Missouri and
    4. chemist Joseph Rosefield.

In 1884, Marcus Edson developed a process to make peanut paste by "milling" roasted peanuts between two heated plates.

A year later, The famous cereal maker, Kellogg, received a patent for a technique he developed for making peanut butter with raw peanuts in 1895.

Dr. Straub is responsible for patenting a peanut butter making machine in 1903.

Peanut butter was introduced to audiences at the 1904 Universal Exposition in St. Louis at C.H. Sumner's concession stand.

Now….96 years later… the man responsible for bringing us peanut butter the way we know and love today… was Joseph Rosefield.

In 1922, through homogenization, Rosefield was able to keep peanut oil from separating from the peanut solids. The rest they say……..is history!

Have you ever heard someone say……"They get along like oil and vinegar!

What that means….is that oil and vinegar generally don't mix well together.

That's why most Milk is HOMOGENIZED. The physical process breaks down the fat molecules in cream into smaller ones, so that the smaller fat molecules can spread evenly throughout the milk. This allows the cream and milk to stay together.

The same thing is done with Peanut Butter. HOMOGENIZATION allows the oil in peanut butter to mix with the crushed peanuts.

Rosefield later sold the patent to a company that began making Peter Pan peanut butter. Rosefield decided to go into the Peanut Butter business for himself …..selling the Skippy peanut butter brand through his Rosefield Packing Company.

He also supplied peanut butter for military rations during World War II

NOW……let's take a look at different kinds of Peanut Butter.

I grew up on Skippy Peanut Butter or Jif Peanut Butter. Whichever my mom had a coupon for.

Now that I'm living a healthy lifestyle…..regular Skippy or Jif Peanut Butter wouldn't be one of the healthiest choices to make.

Let's take a look at a jar of Jiff creamy peanut butter……

Here are the ingredients…… Roasted Peanuts and Sugar. Contains 2% or less of……Molasses,.,,Fully Hydrogenated Vegetable Oil …..which means hydrogen is added to break down the fat molecules to produce a more solid saturated fat. The process of Fully hydrogenated produces NO TRANS FATTY ACIDS, which is less harmful to your body than Partially hydrogenated fats.

The serving size is 2 Tablespoons.

There are 190 calories per serving.

Total Fat is 16gms Contains 2.5 gms of saturated fat & there are NO Trans Fat.

Saturated fats are simply fats that stay solid at room temperature. We see mostly saturated fats in animal fat. The marbled fat you see in a steak or the fat on a piece of chicken.

Trans fat which are also known as Trans Fatty Acids….. when Hydrogen is added to the oil to help make it a solid. You see Trans Fats in Margarine or Crisco Oil.

There is NO Cholesterol …..one serving has 105mg of Sodium.

There are 8gms of Total Carbs…….there are 2gms of Fiber ……and……3gms of Sugar, which is ADDED.

There is 7 gms of Protein in a serving

    Each serving contains ….20% Niacin…..10% Vitamin E …..4% Iron….and…..2% Riboflavin.

Since the Jiff Peanut Butter is Fully Hydrogenated…..you do not have to refrigerate it. You can store it in your pantry and the peanut butter will stay a solid.

Now……let's look at my favorite peanut butter.

I LOVE the brand "Once Again" The Once Again Company began in 1976 in rural Nunda, NY. The company is "Employee-Owned" I LOVE THAT!

I happen to love…. the Once Again Creamy Peanut Butter

Here are the ingredients: Dry Roasted Blanched Organic Peanuts, Salts.

That's it. That's the ingredients Peanut Butter should have ……Period!

No Fully Hydrogenated Vegetable Oil…….so that means the Oil and Peanut butter IS separated. You will need to "Stir" the Peanut Butter to mix the oil and peanut butter. I refrigerate the peanut butter after stirring and that helps keep the peanut butter a solid.

Now for the nutritional value …….

Serving Size is the same = 2 Tablespoons

There are 201 Calories per serving.

    Total Fat is 16 gms

Saturated Fat is 3 gms and there is NO TRANS FATS

There is NO Cholesterol and each serving has 50mg of salt.

There are a total of 7gms of carbs…….2 gms of Fiber ….and…..2 gms of sugar.

There is 9 gms of Protein!

    Each serving has … 10% Folate……4% Potassium…..4% Iron…. And 2% Calcium

If you are interested in buying "Once Again" Peanut Butter….. go to their website

You can buy Once Again products on line at www.onceagainnutbutter.com

If you would rather shop and buy "Once Again" Peanut Butter at a local supermarket near you…….. you can buy it in a Whole Foods market or Sprouts…..or in a local Health Food store near you. If you are looking for a more "familiar" brand of Peanut Butter that is healthy for you…..I found that "Smuckers" Natural Creamy Peanut Butter" will pass the test.

The Healthiest Rice on Earth! Aug 04, 2017
    Show notes

    Hey there Weight Loss Nation,

Today, we take a good look at - The Forbidden Food – Black Rice

Black Rice is also called "Forbidden Rice" or "Emperor's Rice."

In Ancient times, Black Rice was "reserved" for the Emperors of China and used as a "Tribute" food.

As a matter of fact…….Anyone caught stealing even a "handful" of the sacred Black Rice, would be put to death!

"Black Rice" was rare in Ancient China and it's origin was unclear until recently.

In a study published by "The Plant Cell," in September of 2015, Researchers from two institutions in Japan collaborated to examine the genetic basis for the black color in rice grains. They discovered that the trait was due to a rearrangement in a plant gene, which activates the production of "Anthocyanins."

I hope you recall that I spoke about "Anthocyanins" on last week's episode on "Raspberries," on Concoction Friday.

"Anthocyanins" are what give fruit it's color. Red Raspberries, Black Berries, Red Rice and…..Black Rice!

The researchers concluded that this rearrangement of the gene must have originally happened in the tropical "japonica" subspecies of rice, (meaning it happened in or around Japan) and that the black rice trait was then transferred into other varieties (including those found today) by crossbreeding.

Dr. Zhimin Xu, Associate Professor at the Dept. of Food Science at Louisiana State Univ. Agricultural Center…. Who reported on the research presented at the 240th National Meeting of the (AMS) American Chemical Society said…..

"Just a spoonful of black rice bran contains more health promoting anthocyanin antioxidants than are found in a spoonful of blueberries, but with less sugar and more fiber and vitamin E antioxidants."

    Wow! That's a powerful grain!!!

Black Rice is the variety of rice with the most powerful disease fighting "anti-oxixants," as well as a great source of FIBER.

Black Rice contains "anti-inflammatory" properties which has the ability to…… "Search, Fight & Destroy" "Free Radical Cells" that cause Cancer……making it part of our "Pac Man" family!

That's right Nation…….Black Rice is part of our "Pac Man" family. Searching for "Free Radical Cells" "bacteria" and "Viruses" that are invading the cells in YOUR Body!

The outermost layer of black rice…. Called "the hull," is where most of the nutrients are found.

White rice is "milled," where the "hull" "bran" and "germ" is removed to expose just the rice.

After that…..the white rice goes through a process where it is "polished"…… to make the rice look bright, white and shiny.

Removing the hull of the rice and then "polishing" it removes much of the nutrients and flavor of the rice.

How does it compare to "black rice"?

    I'll tell you………

A 6oz serving of "White Rice" contains:

220 calories, 6.8 gms protein, 1.2 gms of iron and 0.6 grams of fiber.

    "Black Rice" contains:

200 calories, 8.5 gms of protein, 3.5 gms of iron, 4.9 gms of fiber, and the highest amount of antioxidants of any rice variety.

Study after study has found that eating whole grain varieties with high fiber content, protect against obesity, heart disease diabetes and digestive issues.

Fiber binds waste and toxins within your colon, which helps to regulate bowel function – reducing or eliminating constipation and diarrhea.

How do you Prepare Black Rice?

Very similar to how you cook other whole grains.

Calculate ratios: 1 cup rice should cook in 1 1/2 cups water; scale up or down as needed.

Don't rinse: The outer layer has antioxidants, which may help lower cholesterol, help your immune system and help with brain functions.

Go heavy: A thick-bottomed pot prevents scorching.

Simmer slowly: After coming to a boil, the rice should simmer, covered, until it absorbs the water (anywhere from 25-35 minutes).

Steam to finish: Keep the rice covered, off heat, for 10 minutes after cooking.

Today's Recipe I have chosen for you is:

Black Rice with Broccoli & Almonds

Makes 4 Servings about 300 calories each serving.

    Ingredients:

1 cup black rice 1 pound broccoli, cut into small florets 3 cloves garlic, unpeeled 4 tablespoons olive oil 1 teaspoon coarse salt Freshly ground pepper 1 teaspoon Dijon mustard (or Brown Mustard) 2 tablespoons red-wine vinegar 1/3 cup sliced almonds, toasted 1 cup lightly packed fresh flat-leaf parsley leaves 2 scallions, thinly sliced

    Directions

    1. In a heavy-bottomed medium pot, bring rice and 1 1/2 cups water to a boil. Reduce heat to maintain a simmer, cover, and cook until rice is tender and water is absorbed, about 25 - 35 minutes, depending on your stove top.

Remove from heat; let stand 10 minutes. Transfer to a serving bowl. Let cool slightly.

    2. Preheat oven to 425 degrees. On a rimmed baking sheet, toss broccoli and garlic with 2 tablespoons oil. Season with 1/4 teaspoon salt and pepper. Roast, stirring once, until tender, about 20 minutes. Remove and reserve garlic; transfer broccoli to bowl with rice.

    3. Remove garlic from skins. Place in a small bowl; mash. Whisk in mustard, vinegar, remaining 2 tablespoons oil, and 1/4 teaspoon salt. Drizzle over salad. Add almonds, parsley, and scallions; toss. Season with remaining 1/4 teaspoon salt and pepper.

    Serve and Enjoy!

Eliminate Menstrual Cramps & Hot Flashes With Raspberries S2 Ep039 Jul 21, 2017
    Show notes

    Hey Weight Loss Nation!

    www.TheWeightLossNation.com

I hope you are enjoying your summer!

One of my favorite fruits that is peaking right now, are "raspberries."

This high fiber, anti-oxidant rich fruit, kicks ass!

Raspberries are in the Rosaceae family, which means they are related to roses. I had no idea the raspberry was related to roses! The Raspberry's classified name is "Rubus idaeus"

In Greek mythology, Zeus enjoyed raspberries, which were "white" in color. Zeus's nursemaid was named "Ida."

According to legend, "Ida" was picking some raspberries for Zeus and she pricked her finger on a thorn. Her blood stained the white raspberries, turning them red.

In honor of "Ida's" passion for the raspberries, Zeus kept the raspberries red and they have remained that way ever since.

Americans most commonly recognize Raspberries in two different colors - Red and Black.

Raspberries do come in other colors, such as purple and yellow, and come in almost 200 variations.

The State of Washington leads the U.S. in Raspberry production, producing over 70 million tons annually.

Humans have been using Raspberries for medicinal purposes over thousands of years.

The leaves of the raspberry bush contain a property called "fragirine," which tone the female reproductive system.

Drinking one to two cups a day of "raspberry tea," will help Menstrual flow and cramps by regulating the uterine muscles.

"Raspberry tea" also helps with bladder control in adults and children.

A cup of raspberry tea before or with dinner is a perfect time to help with bladder control. Having any liquids later in the evening will only trigger you bladder to empty. If you want to help a younger child control their bladder overnight, try to eliminate any fluids after 6:00pm.

"Fragirine"also helps regulate the walls of the intestine. By regulating the intestinal wall, people with digestive issues will benefit from drinking "raspberry tea."

Raspberries contain "anthocyanins," which is the pigment that gives plants their purple, blue and red color.

Anthocyanins are part of my "Pac Man" family, which means it is search, fight and destroy anti-oxidant.

Killing free radical cells and offering anti-inflammatory agents, Anthocyanins are a must in helping your immune system and YOU healthy!

Raspberry's also contain "Polyphenols" which are "Flavinoids," even more anti-oxidants and anti-inflammatory agents for YOUR body!

The potent Polyphenols will help your white blood cells "eat up" many types of cancer cells, which can slow down or even eliminate some tumors.

Polyphenolshave shown to have an effect on endometrial cancer cells as well as lung, esophageal, prostrate and colon cancer cells too!

Raspberries are also high in FIBER!

Fiber helps keep blood sugar stable. If you are a type 2 diabetic, you can reduce blood glucose levels, by eating a cup of raspberries 2-3 times a week.

Raspberries also improve insulin levels in your blood.

One of the best reasons of eating fiber, is that fiber keeps you "regular." Fiber helps relieve constipation.

"Fiber"has also been associated with lowering blood pressure and cholesterol levels.

So.....increase your fiber intake and reap the benefits of raspberries!

Let's look at the Nutritional Value of Raspberries:

Serving Size - 1 Cup of Raspberries

    64c

    1.5gms Protein

    0.8gms Fat

    15gms Carbs

    8gms Fiber - That's the right figure!

    5gms Sugar

1 Cup of Raspberries will yield 55% of your daily intake of Vit C, 41% your daily intake of Maganese and 12% of your daily intake of Vit K.

Eating 3 Cups a week of fresh Raspberries will help you attain the most benefits.

The best way to eat raspberries?

Wash them and eat them right out of your hand!

If you aren't fond of that way, you can sweeten up Greek Yogurt.

1 Cup of Plain Greek Yogurt

    1 Cup of fresh raspberries

    1/4 cup of sliced almonds

1 tsp of raw, unfiltered local honey

1 tsp of real vanilla extract

    Mix all together and enjoy!

You can also add raspberries to your salad or... even put them in your blender with 1/4 cup of olive oil and 1/4 cup of apple cider vinegar for an awesome salad dressing!

Raspberries are known as "nature's candy," so go grab some and eat to your health!

Learn How To Saute ANY Protein on Concoction Friday S2 Ep038 Jul 14, 2017
    Show notes

    Hey Weight Loss Nation!

    It's Concoction Friday!

Today, I'm going to tell you how I SAUTED Chicken from MY OWN Kitchen!

Last week, I interviewed Chef Todd Mohr, from Web Cooking Classes.com

Chef Todd gave ME and ALL of Weight Loss Nation the "5 Skills Taught in Culinary School That is Essential for Home Cooking."

Chef Todd was kind enough to take it a step further....

AND he taught us how to "SAUTE" ANY Protein.

Chef Todd Mohr told us the "9 Steps" to Saute properly.

I promised I would do the 9 Steps and report back to all of you!

Well....... it's Concoction Friday and I'm ready to report...... I did it and......... I am my own worst enemy!

I DID NOT follow the "9 Steps" EXACTLY as Chef Todd Mohr told me to do.

    What happened?

I burnt everything I put into the pan! LOL!

This was MY Fault! I had the "9 Steps" written down in the EXACT order Chef Toddtaught me.

Instead.......I "looked over" the "9 Steps" and then went into the kitchen without the paper.

I tried to "Saute" by Myself! OMG!

I decided to try it again. This time, I was bringing the paper with the detailed "9 Steps to SAUTE" with me.

I followed the "Saute Cooking Method" just the way Chef Todd Mohr taught me.

    Guess what happened this time?

    I successfully SAUTED Chicken! Yeah!......

Chef Todd Mohr is awesome! I did it! I loved the meal!

Here are the "9 Steps to Saute ANY Protein," as Chef Todd Mohr taught us on last week's Weight Loss Nation Chef Todd Mohr's Interview

9 Steps To SAUTE ANY Protein:

    1. Pan Hot

    2. Good Fat on Bottom of Pan (Light Coating)

    3. Fat Hot

    4. Add Protein

    5. Cook 75% of Protein

    6. Plate Protein

    7. Add Veggies, potatoes, spices etc.

    8. "Deglaze" add liquid (ex: chicken broth, wine etc) stir bits & pieces from bottom pan into liquid.

    9. Put Protein back in pan and spoon over sauce. Once meat is 165`(use digital thermometer)

    It's DONE!

Have brown rice, quinoa or sweet potatoes as a side dish.

That's a healthy meal and it's EASY to make!

I did it! YOU can to!!

Visit Chef Todd Mohr on his website - webcookingclasses.com
