The Future of BBQ Sep 05, 2019
    Show notes

    Raleigh is up in smoke!

Esquites (Mexican street corn) on the side of a classic double patty burger done on a flat top with American cheese and dill pickles all on a potato bun. Hungry yet? I haven't even talked about BBQ yet. Adam Cunningham and Marc Russel are fusing Eastern North Carolina, Texas and Kansas City BBQ's all in one. As if melding different BBQ cultures wasn't enough, these mad-bbq geniuses introduce latin flavors (barbacoa) into their whole hogs, smoked meats and sides.

We nerd out on BBQ, why you have to use a flat top to cook burgers, how to use smokers inside. You can listen to this now and go experience it all soon at Longleaf Swine BBQ inside the Transfer CO food hall!

Transformers of Brew Aug 08, 2019
    Show notes

For years anybody who owned land or a restaurant or a bar in Raleigh wanted to get their hands on the space atop Boylan Street. Chris Borresson (aka Cap'n Redbeard, aka Magic maker) and his wife Sara Abernethy were not in Raleigh and did not seek this potential pot of gold that sat atop the Boylan Bridge. However, because they did not seek it, much like the Sorcerer's Stone, they were awarded it.

Chris and Sara acquired the sleepy "also-ran" known as the Boylan Street Brew Pub in August of 2018. On this episode we hear how Chris and Sara brought in the likes of the one and only Max Trujillo, Bobby McFarland to help transform this majestic location high atop Raleigh into a brewery and kitchen that is befitting of it's location. This episode, has restaurant creation, entrepreneurial business wisdom and some delicious cooking and brewing tips.

And, by opposing them, we go down the the arduous road of privatization. This is the conundrum, it is not all roses with a free market, there will be growing pains, but there will also be great gains. In the meantime house bill 971 & senate bill 290 have offered some upgrades to our current system. Listen in to find out what goodies our industry just received. We discuss in the bills and the benefits in depth with the NCRLA Director of Communications and lobbyist Margo Metzger.
