    Throughout my training and practice as a physician I have come to one very disappointing conclusion: Western medicine isn’t helping people lead better lives. Now that I’ve realized this, I’ve become obsessed with understanding what makes us healthy or ill. I want to live the best life I can and I want to be able to share this knowledge with others so that they can do the same. This podcast is the result of my relentless search to understand the roots of chronic disease. I hope you’ll join me on this journey.

    72. Are Excess Polyunsaturated Fats (PUFAs) to blame for the epidemic of Chronic Diseases? With Chris Knobbe, MD Sep 28, 2020

    Dr. Knobbe began his practice of ophthalmology in 1994, after completing his residency training at the University of Colorado Health Sciences Center, in Denver, Colorado, USA. He was certified by the American Board of Ophthalmology in 1997 and has remained board-certified since then.

    Eye physician and surgeon, Chris A. Knobbe, MD, had been in practice nearly 20 years when, in 2013, he asked himself the question, “Could macular degeneration be a ‘Westernized disease’? Could AMD be a disease that is the result of a Westernized diet?” That question would forever change his life.

    The hypothesis that Dr. Knobbe would proffer holds that macular degeneration, which is the leading cause of irreversible vision loss and blindness in developed nations, is not only preventable, but treatable in the early to moderate stages, with an ancestral diet.

    Do the Hadza really consume 100g of fiber per day? Do we really know what a healthy gut microbiome is? Doubt it! When asked to rank their preferences for food (their diets are essentially meat, honey, berries, baobab fruit, and tubers) they consistently rank honey as their favorite and tubers last! In this video, I break down a number of articles looking at how the Hadza eat, their predilection for honey and meat, their oral health, and the seasonal cycling of their microbiota. I challenge the notion that we know what a "healthy" gut microbiome really is and suggest that this is better defined by clinical outcomes rather than myopic interpretations of individual species/phyla. I also share my own gut results on a nose to tail carnivore diet with honey in it.

    Brad Marshall is the author of the Blog Fire In A Bottle and the creator of The Croissant Diet. Mildly obsessed with food and its history, his work focuses on trying to place current ideas about diet, including keto and carnivore diets into the framework of traditional Dietary patterns.

    Brad has a genetics degree from Cornell, a certificate from The French Culinary Institute, has studied cancer at Memorial Sloan-Kettering Cancer center and worked as a programmer for the Berkeley Drosophila Genome Project. He spent the last 15 years raising rotationally grazed pastured pork on his farm in upstate New York while running a butcher shop, local food restaurant and USDA inspected meat processing facility.

    Brad is also the founder of Firebrand Meats, which is dedicated to producing pork and poultry products that are low in Linoleic acid, the n6 polyunsaturated fat (PUFA) whose intake has seen a dramatic worldwide increase in the last century.

    Stearic acid is an 18 carbon saturated fat that has intriguing effects on the human body. It's been shown to positively affect mitochondrial activity, and diets that are low in cause mitochondria to change activity and phenotype in negative ways. Mouse models of this fatty acid also suggest some profoundly powerful effects on glucose tolerance and visceral fat when compared to oleic acid (18C monounsaturated fat), and linoleic acid (18C polyunsaturated fat). I break it all down in this video and share my RBC fatty acid levels as well as a compelling n=1 case study of Emmy's weight loss with dietary shifts away toward more stearic acid and less linoleic acid.
