    • Russ’s Drink Corner

    • Redemption Straight Bourbon

    • Description

    • Rye whiskey was America’s favorite spirit prior to Prohibition, and its bold spicy flavor connected with generations of Americans not short of challenges. Following Prohibition, rye whiskey largely disappeared, yet America’s character and resolve did not. We believe that bringing back authentic rye whiskey will be appreciated as much now as it was then. Crafted by Master Blender, Dave Carpenter, Redemption Whiskey is inspired by pre-Prohibition recipes that bring forth truly distinctive ‘rye-forward’ notes. A truly easy drinking whiskey distinguished by its subtle rye-forward flavor, our bourbon has a rye content of 21%, giving it a light but distinct hint of spice. Enjoy it on the rocks or mixed into your favorite bourbon cocktail.

    • Details

    • Mashbill: 75% corn, 21% rye, 4% malted barley

    • Proof: 88 (44% ABV)

    • Rating: 79

    • Pegu Club

    • Description

    • The Pegu Club cocktail originated the Pegu Club in Rangoon, the capital of Myanmar or Burma, which was formerly part of the British Empire. The Pegu Club, named for the nearby Pegu River, made its way around the world with Brits and foreigners alike in the early 20th century. No one is certain who created it or when it was invented, but it must have been before 1927, as that was the year of publication of Harry MacElhone’s Barflies and Cocktails, which was the first book to make mention of the Pegu Club. From there it became a mainstay in bar culture and a clear cultural reference.

    • 2Bar Bottled-in-Bond Straight Bourbon

    • Description

    • Over a century ago the 2BAR ranch was founded in Texas. For five generations the 2BAR brand has stood for quality, independence, and hard work. Those values are brought to 2BAR Spirits, where locally grown grain is milled, mashed, fermented, distilled, and aged in oak barrels. We do all of this with one goal in mind: make a damn fine whiskey. We remain true to that lineage at our distillery in Seattle, Washington. Our single minded focus on making great whiskey is what motivates our team every single day. We do it the hard way because it’s the right way. At the end of the day it’s just really good whiskey, made by people with relentless passion.

    • Cheryl’s Recipe Corner!

    • One-Pot Enchilada Rigatoni

    • Description

    • Winter is the time of year where I love casseroles and hearty meals. But, sometimes it gets boring when it’s an Italian themed item. This recipe is in my “to try” list, because it sounds fantastic with an added spin on it that takes the Italian away from it!

    • Ingredients

    • 1 lb lean (at least 80%) ground beef

    • 1 can (19 oz) Mild enchilada sauce

    • 1 can (12 oz) evaporated milk

    • 1 lb uncooked rigatoni pasta

    • 1 can (11 oz) whole kernel corn with red and green bell peppers

    • 2 cups shredded Mexican cheese blend (8 oz)

    • Directions

    • In nonstick 5-quart Dutch oven, cook beef with salt to taste over high heat, stirring frequently, until brown. Do not drain. Add enchilada sauce, evaporated milk, 4 cups hot water, the pasta and corn. Heat to boiling over high heat. Reduce heat; simmer uncovered 15 minutes, stirring occasionally; do not drain. Remove from heat; stir in cheese. Serve topped with crushed tortilla chips, cilantro and chopped green onions, if desired.

    • Rum Cake

    • Description

    • A tasty addition to your dessert table for your holiday dinner… or anytime you’re wanting a delicious cake! Rich, K0EB, requested a rum cake.

    • Ingredients (Cake)

    • 1 box (about 18 oz.) yellow cake mix

    • 1 package (3.5 oz.) instant vanilla pudding mix

    • 4 whole eggs

    • 1/2 c. cold water

    • 1/2 c. canola oil

    • 1/2 c. rum (dark or light is fine… but dark is better!)

    • 1 c. chopped pecans

    • brown sugar (optional)

    • Ingredients (Glaze)

    • 1 1/2 sticks of butter

    • 1/4 c. water

    • 1 1/2 c. granulated sugar

    • 3/4 c. rum

    • Directions (Cake)

    • Preheat oven to 325F. Grease and flour a bundt cake pan (you can cheat and use “Bakers Joy”, if you like!). Sprinkle nuts over bottom of pan. If desired, sprinkle a couple of tablespoons of brown sugar over the nuts (extra yum). Mix all cake ingredients together. Pour batter into pan over nuts. Smooth out ’til the top is even. Bake for 1 hour, or a little less if the pan is black. Do not overbake.

    • Directions (Glaze)

    • When cake has ten minutes left to bake, make the glaze. Melt butter in saucepan. Stir in water and sugar. Boil for 4 to 5 minutes, stirring constantly. Turn off flame and pour in rum. Stir to combine and reheat for 30 seconds. Remove cake from oven. Immediately drizzle 1/3 of the glaze on the bottom (top) of the cake. Allow to sit for five minutes. Invert the cake onto a serving plate. Thoroughly (and gently!) prick surface of cake with a fork. Slowly drizzle remaining rum glaze all over the top of the cake, allowing it to drip down the sides. Cool to room temperature before serving to ensure glaze has soaked in.
