Ep. 779 Susy Silva | Wine, Food & Travel With Marc Millon Feb 07, 2022
    Show notes

Episode 779 Marc Millon interviews Susy Patrito Silva from Casa Artusi, in this episode of Italian Food & Wine with Marc Millon on the Italian Wine Podcast.

    About Casa Artusi:

Casa Artusi is named for Pellegrino Artusi, man of letters and merchant, writer and gastronome, and a sort of “founding father” of a line of fine Italian cooking - by way of his gastronomical guide, La scienza in cucina e l’arte di mangiar bene, or Science in the Kitchen and the Art of Eating Well, that first debuted in 1865. This manual of sorts is a collection of recipes, the fruit of the author’s innumerable trips and experiments. Reprinted and translated in several major languages, the book is still considered a traditional reference for the cooks and gourmands of the world. In order to keep Artusi’s particular passion for homecooking alive, and to highlight the characteristics of the land and customs of the Region of Emilia Romagna, Casa Artusi opened in 2007, and has been known since for its hospitality, tasty and versatile creations, and quality agro-alimentary production, all in the Emilia-Romagnan style.

Ep. 776 San Salvatore Part 4 Of 4 | On The Road Edition Feb 04, 2022
    Show notes

Welcome to episode 776, another on the Road Edition With Stevie Kim, Join her as she continues her adventure in Campania, at the L'Azienda Agricola San Salvatore speaking with Giuseppe Pagano, Principal of the Company and the Chef, Giovanni Solofra, of Tre Olivi, the 2 starred Michelin Restaurant located in Pagano’s hotel Savoy Beach Hotel. This is part 4 of this 4 part series.

Learn more about the Restaurant by visiting:

    guide.michelin.com/en/campania/pae…urant/tre-olivi

    More about Chef Giovanni Solofra:

Giovanni Solofra, who has great experiences in important cuisines such as Heinz Beck, Quique Dacosta and Ciccio Sultano, has at his side his partner in life, Roberta Merolli, chef patisserie of Tre Olivi and longtime collaborator of Heinz Beck. The love in life and work, have led them in 2018 to the most desirable culinary award: the first Michelin star.

Once in Paestum, they decided to study the excellences of the Cilento, the Slow Food ‘’Praesidia’’ and the so many uniqueness that have made of this area the cradle of the Mediterranean Diet. The result of this research is a menu characterized by a strong appeal.

More about the Principal of San Salvatore:

Giuseppe Pagano is a successful entrepreneur in the hospitality sector. Nowadays his business vision and passion has expanded into the world of fruit orchards, vegetables, olive groves, buffalo products and of course wine!

"I’VE SEEN A BUFFALO THROUGH THE GRAPEVINES AND I’VE DRANK WINE.

I’VE SEEN A BUFFALO AND IT HAS SEEN ME."

The idea for the San Salvatore Winery was first conceived in the mid-40s in Boscoreale, on the slopes of Mount Vesuvius. It was Giuseppe's father that had first made wine in this area. The San Salvatore winery is named after Giuseppe's father and after many years in the Hotel industry Giuseppe and his brother decided to go back to their roots; buying land in Campania in 2003 and developing the winery that we see today. They have a love for organic and biodynamic agriculture, making sure not to stress their vines, respecting nature; the rhythms and traditions of a special terroir. The vineyards are located in the Cilento National Park, it is an area distributed among Stio, Paestum and Giungano. And it is here, at 700m from the vineyard and in view of the Temples, they also have their modern winery, equipped with a 96kW photovoltaic system that allows them to minimize the release of carbon dioxide into the atmosphere. The family prides itself on their 97 hectares of land, of which 21.5 are under vine and the rest are divided between orchards, olive groves and woods, including 450 beloved buffalo that are exported all over the world, from Australia to the United States. Their plans for the future are equally as interesting: a series of outlets where their products and the best products of the national park will be prepared by women, Tune-in and find out more!

The mission of the Libera Terra project is to give dignity to territories with a strong mafia presence through the creation of autonomous and cooperative farms that are self-sufficient, stable, and that are able to create work places, thereby establishing a moral economic system based on legality, social justice and market.
