Christmas & Holiday Healthy Eating Jan 02, 2008
    Show notes
    Greetings Everyone,
Now that it is the new year -- 2008 -- many of us are reminded of the type of foods that we consumed during Christmas and the Holidays. I'm sure some of us ate a little bit too much in some areas.
Yet do not be discouraged! I am showing you some photos and then later with a recipe from my family's Christmas & Holiday meals. As always, we prepared our foods in a very healthy method (eliminating extra sodium and adding healthy substitutes) and ate in healthy portions (not oversized or big portions). Our meals were traditional such as:
    • Ham (low sodium and extra lean)

    • Scallop potatoes (substitute low fat milk and Weight Watchers cheese)

    • Green Beans

    • Stuffing (low sodium)

    Check it out!

Thanksgiving Day Healthy Turkey and Appetizers - Step by Step Procedure Nov 24, 2007
    Show notes

As promised, here is the step by step procedure for preparing and cooking a Healthy Turkey and appetizers for your HOLIDAY festivities.

The first step: PREPARE THE TURKEY!

    Here is the recipe:

Thanksgiving Day Healthy Turkey and Appetizers Recipe*
    Shallot and Thyme-Rubbed Roasted Turkey
Ingredients to Shallot and Thyme paste:
    24 shallots, peeled and quartered
    8 garlic cloves, peeled
    6 Tbs olive oil
    2 sprigs fresh thyme
2 Tbs . finely chopped fresh thyme leaves
    2 Tbs. Dijon mustard
    1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
    Ingredients for Turkey
    15-16 lb. turkey
    1 large onion, coarsely chopped
    2 celery stalks, coarsely chopped
    2 sprigs fresh thyme

    Instructions

    1. Position oven rack in bottom third of oven and preheat to 350F.

    2. Place shallots, garlic and thyme sprigs in a small ovenproof baking dish and drizzle with olive oil.

    3. Cover dish with foil and bake until shallots are very tendor but not brown, about one hour. Uncover and cool 30 minutes.

    4. Place garlic, half of shallots and oil in work bowl of a food processor. Add chopped thyme, mustard, salt and pepper. Process until almost smooth.

    5. Transfer paste to a small bowl. Shallot paste can be covered with plastic wrap and refrigerate for up to four days.

    6. Rinse turkey inside and out with cold running water and pat dry.

    7. Starting at the neck end, carefully slide your hand between the turkey's skin and breast to loosen skin. Spread a half cup of shallot paste under skin and over breast meat.

    8. Tuck wings underneath the body of the turkey and the legs together loosely with kitchen twine or dental floss so the turkey will hold its shape.

    9. Place turkey on a small wire rack set inside a large roasting pan. Spread a half cup of shallot past all over the outside of the turkey neck, gizzard and heart and place onion, celery and thyme sprigs in the pan around turkey.

    10. Bring a cup of the wine and two cups of the broth to a boil in a medium saucepan. Pour boiling liquid into bottom of roasting pan.

    11. Cover breast loosely with foil and place turkey in oven. Roast for one and a half hours.
Add a cup of the broth and a cup of wine to the pan and roast turkey another 30 minutes.
Remove foil and add a cup broth to pan.

    12. Continue roasting until an instant-read thermometer inserted in the thickest part of the thigh registers 175F, another one to one and a half hours. During roasting, cover exposed parts of turkey with foil as needed to prevent over-browning and add more broth if pan juices evaporate.

    13. Remove turkey from oven and transfer to a platter. Tent turkey loosely with foil and let rest 30 minutes -- its internal temperature will rise another 5 - 10 degrees.
Reserving drippings and discard neck, gizzard and heart.

    14. Place turkey on a serving platter, carve and serve with gravy.

THAT'S YOUR HEALTHY THANKSGIVING ROASTED TURKEY!!

Completed - NBCD 2007 Weight Loss Challenge! Aug 01, 2007
    Show notes

It doesn't seem possible, but the 2007 New Black Cultural Diet Weight Loss Challenge is over! Of course with any challenge, initially you think to yourself -- How Am I Going to Do This?
Yet as each day and month went by, I didn't think about it near as much primarily because I developed a regimen that fit my lifestyle and comfortable to me. That's the reason why I am glad that I stayed focused on the four major elements of the NBCD regimen:

    • Body Image

    • Food Selection

    • Food Preparation

    • Exercise and Physical Fitness

Over these past 6 months, perhaps the most interesting aspect was the fact that my schedule changed constantly throughout this time period. From the winter month of February to the early spring months of March, April and May and then to the summer months of June and July, the choices of food, preparation and exercise & physical fitness regimen had to change in accordance with the weather and my change of schedule.

Yet the biggest test was -- how do I feel about my health now and am I happy with how I look? The answer is "Yes -- I feel very happy and please how my body image is," AND "Yes -- I feel better about my health condition now than six months ago."

Below is my current photo after the NBCD Weight Loss Challenge. Let me know what you think at: feedback@newblackculturaldiet.com

I want to also thank everyone who was interested in joining the Weight Loss Challenge. Additionally, I want to thank our sponsor -- Mrs. Dash and all of their fine products!

Beginning My 6th Month on the Challenge! Jul 01, 2007
Show notes Well, it's finally here -- the 6th month of my New Black Cultural Diet Challenge!
I feel really good that I have kept focus on all four areas of the NCBD challenge. They are:
    1. Body Image
    2. Food Selection
    3. Food Preparation
    4. Exercise and Physical Fitness
Some people said it was going to be tough on me particularly during the summer months and the holidays that occur during the late spring and summer. Quite honestly, it's been easier because I know that I can still eat the foods that I enjoy during the spring and summer yet make modifications in the portion size and select healthier versions of them. The key is just to maintain the same regimen while also experimenting with more variety of foods!!
In particular, I have come across a number of great lower calorie and delicious microwave luncheons from Stouffer's Lean Cuisine! You have to check out their line of new products particularly
    • Ginger Garlic Stir Fry with Chicken - 4g fat - only 290 calories
    • Glazed Chicken - 3.5g fat - only 220 calories
    • Chicken Carbonara - 7g fat - only 270 calories
    • Deep Dish Three Meat Pizza - 9g fat - only 350 calories

Additionally, these Stouffer's Lean Cuisines were on special at the grocery store -- 5 for $10.00. Now that's a bargin! I just waited for these Lean Cuisines to go on sale from one grocery store to another (usually they do during the summer) and stock up on them!! Go to: www.leancuisine.com and check out all the great tasting and low calorie dishes that fits my lifestyle and ethnic taste!

I am also trying out a new set of work-out DVDs! Of course, they are Billy Blanks but this particular workout DVDs are called:

Billy Blanks All New Bootcamp Elite

    This package includes:

    • Three New Elite Workouts:
    1. Mission One - Get Started
    2. Mission Two - Maximum Power
    3. Mission Three - Rock Solid Abs
    • All New Weighted Elite Billy Bands
    • 7-Day Eating Plan

I also get excited (geeked-up) for the Billy Blanks workouts and these are no different!! He goes over the basics, but this time with more explanation of the moves and how it will improve your body parts and muscles and then he adds his own wit and humor to the workout maneuvers! Yes, Billy Blanks looks like he is having more fun in his videos and including more persons of color in this videos! That's always good!

Well, there you have it! I am continuing the NBCD Challenge for the 6th month!! If you want to share any comments or suggestions, please send me an email at: feedback@newblackculturaldiet.com. I will include your comments on future blogs and shows!

Additionally, watch out for some brand new event to happen here on the New Black Cultural Diet Website!!

Relaxing at the Pool, Staying Fit and Keeping to the 2007 Weight Loss Challenge May 28, 2007
    Show notes
    What's Up Everyone,
I am still following my New Black Cultural Diet Challenge and this month of May has gone pretty fast. With all the activities going on this month, it's amazing how easy it is to stay on this fitness challenge. I really do not have to think about the major areas anymore (body image, food selection, food preparation & physical fitness/exercise) because it is AUTOMATIC!
For example, my family and I had a festive event at our house and we served everyone with healthier versions of the foods that they liked. Healthy versions of pizza and snacks for the kids as well as low-sodium hot dogs and turkey burgers. The kids and adults loved them!
The next day, I got up early and went through my intense football workout! Yes, it is still high volume with much intensity from the start to the finish!! Again, I amaze myself that once I get into the workout, it goes so fast and my intensity through each drill is high! Of course, I have those moment when I'm thinking -- "why don't I just take it easy" -- yet before you know it that thought goes away and I'm back sprinting through the drill!!
Finally, later in the morning, here I am relaxing at the pool! As you can tell, I am doing my best to move my fitness regimen to a higher level and keep my body as fit as it can be at my age!
If you have any comments, feedback or suggestions, send them to: feedback@newblackculturaldiet.com or if you want to be on our next Podcast Show send me an email at: administrator@newblackculturaldiet.com

Staying With the Challenge - Beginning The 4th Month! May 08, 2007
    Show notes
Well, I am still going strong with the 2007 New Black Cultural Diet Challenge! Some say this is too long of a challenge, yet I felt that it needed to be an entire 6 months because of the change of season from Winter to Spring then to Summer! So I wanted myself and of course everyone who is following the 2007 New Black Cultural Diet Challenge to maintain our focus throughout these challenging months and seasons!
Yes, that's right -- I have continued to watch and maintain my regimens in the four areas of the New Black Cultural Diet Challenge. They are:

    • Body Image

    • Food Selection

    • Food Preparation

    • Exercise & Physical Fitness

It really pays off to have these 4 areas to concentrate upon because they act as a REMINDER to stay focus in only these areas. Of course, there are other issues related to weight loss, but these four areas have heighten my areas to achieve successful healthy weight loss.

For Body Image, check out my photo and let me know what you think! Send comments at: feedback@newblackculturaldiet.com . I am doing my best to stay with the challenge!!

By the way, I have TRADEMARKED the New Black Cultural Diet Logo! It is on the website and I explain its description and meanings!

Working on My ABs & Finding New Healthy Foods! Apr 15, 2007
    Show notes

Yes, this is my monthly update for all of my activities associated with the 2007 New Black Cultural Diet Weight Loss Challenge! As you know, this Weight Loss Challenge focuses on four major areas: Body Image, Food Selection, Food Preparation and Exercise/Physical Fitness.
Well, during this past month, I concentrated on two areas in particular --

    • Working on My ABS
    • Finding New Healthy Foods

Now that I have started and continued my Billy Blanks AB workouts, my stomach area REALLY feels and is beginning to look different. My major goal in concentrating in my stomach area is for toning as well as to loose some of those extra inches around my belly. Believe me, this is a very difficult area to loose this inches particularly for guys! Interestingly, for guys, it seems like it is ok to have several extra inches in your stomach area and to actually have a gut!! Well, that's not me and this is an area that I have always wanted to get control of! With the help of the specific workouts, I feel much more CONFIDENT that I can complete this intense training for my ABS but now I FEEL THE TIGHTNESS IN MY BELLY AREA!! THAT MAKES ME FEEL MORE MUSCULAR AND TONED!!

As for finding new healthy foods with regards to food selection, I realize that I have more of an appetite particularly after working out. So therefore, I had to find a healthy "SNACK" in between my major meals of the day. The snack that I have found is called:

    • BRUSCHETTA VEGETABLE CRACKERS

These vegetable crackers are great tasting, all-natural, crunchy snacks. The are all natural made with no genetically engineered ingredients, made with organic wheat flour, no hydrogenated oils and it is LOW FAT!! And most importantly to me at this phase of the Weight Loss Challenge, these crackers taste GOOD!!! Yes, they taste very good and they feel me up between my meals. Now that I have added these crackers to my food selection, I noticed that there are now other companies that are producing more VEGETABLE-BASED CRACKERS!! This is a good thing for all of us, particularly when it's hard to eat healthy in between our healthy meals!!

So hang in there and I am doing the same!! It's not easy because its Spring time and there are so many events and cerermonies to attend and everyone wants to serve food at every event. I am continuing to be very selective in the foods that I eat at these events. I am staying strong and feeling good that I find healthy foods at any social, community, family or cultural event!!
