(August 23, 2022 – Hour One

9:14pm – A few months back I introduced you too Chris Young, the CEO of Combustion, Inc. You might recall that they make an internal thermometer that predicts when your food will be done and the probe also contains 6 internal sensors ensuring the “core” is properly chosen for proper cooking times. Tonight, Chris joins me again to talk about a recent steak experiment he tried. We all know Sous Vide and we all know Reverse sear. Chris decided to pit the two against each other to see which operation actually yields the better cooked steak. While you can go to Chris’s YouTube page to see it for yourself, we will deep dive into it tonight! We will also talk about a follow up experiment he did with “one flip steak” VS. “constantly flipped steak” and we will see what his results were on that too!

Talking you back to 8/18/2015 – This week we feature the one and only (to date) interview that I have done with new BBQ darling, Ernest Servantes…I say new for the folks who only know of Ernest recently due to the major success and rave reviews of his restaurant (Burnt Bean BBQ) in Seguin, TX. However, Ernest has been in the BBQ game a LONG time…when he was really competing, he was very successful, he’s spent time in fine dining restaurants…to put it simply, Ernest can flat out cook in any form or fashion. This was a great look into who Ernest was at the time (well before the restaurant) and what he was looking to do in the years ahead. However, I think what you will hear most clearly is how good and humble of a guy Ernest is…even back in 2015!

9:14pm – As quickly as the close of former KCBS CEO, Emily Detwiler, came and went, a new CEO has been installed at the nation’s largest competitive sanctioning body for BBQ. You most likely have heard his name before, and back in the early 2000’s, he had quite a prolific team and personality on the circuit. Rod Gray, pitmaster of the Pellet Envy competition team and the creator of the EAT Barbecue brand of products, Rod Gray is the 4th CEO in the lifetime of KCBS and tonight we talk about why his interest was held for this position and what he plans to do as he takes over running the vision of the Kansas City BBQ Society.

9:35pm – After Rod, I will be joined be famed live-fire content creator and the founder of Another Pint Please, Mike Lang! Mike will be coming to Hartville Hardware (Hartville, OH) on September 17, 2022 to represent Weber during the 2022 Grillfest. Mike will be doing a live cooking demo and will also be available to answer any questions, sell his book and take pictures! We will talk about how the opportunity come about, why it hasn’t happened in the past (he lives in Ohio) and what he plans to make to sample out to the crowd that day!

We ran into some technical issues last month and missed out on the topic we hit tonight, which is “Water Pan Myths”. You have probably heard a bunch of different things when it comes to what the water pan does in your cooker and tonight we trim the fat!

9:35pm – After Meathead our new friend from the San Antonio Express-News, Chuck Blount, will join us to talk about some of the latest topics in his region of the country. There is a thief stealing thousands of dollars of brisket from La Barbecue, are smoked hamburgers still a thing and there is a new feud that might be brewing in Lockhart! Speaking of brews…there might be some beer talk as well as we close out the segment!
