Ep. 1343 Stefano Silvi | Wine Food & Travel With Marc Millon Apr 11, 2023
    Show notes

Welcome to Episode 1343 in which Marc Millon interviews Stefano Silvi of Fermento Nero.

    More about Fermento Nero:

Stefano Silvi and his friends got together to work on an interesting idea, they had tasted a Korean dish… and they found that it was delicious because of the garlic. This led them down the rabbit hole and into the world of fermented garlic. It turns out, there is amazing garlic in Italy with which to work with.

NeroFermento is an innovative startup, it started through an encounter between agriculture and technology, two souls that are as distinct as they are synergistic with each other in terms of know-how, values and experience:

AI Agricoltori in Erba, an agricultural company part of the Consortium of Garlic Producers of Voghiera which has been involved in the production of Garlic of Voghiera DOP for years, RES. An acronym of Reliable Environmental Solutions, and a cooperative company in Ravenna that operates in the fields of alternative energy and the enhancement of organic matrices through anaerobic digestion.

Earth and science, dexterity and technique, craftsmanship and technology.

NeroFermento finds precisely in the dualism at the basis of its identity, the drive necessary to innovate, experiment and progress, raising its quality standards day after day with the aim of offering the market a new, fresh and unprecedented point of view.

My plan was to return to New York and start a new chapter in the wine business after my first harvest... But three months became 4 years, and after marrying my Italian girlfriend, I moved to Udine permanently in 2002. I studied enology at the highschool and then at the university, but I always follow my mother in her wine travels around the world. In the last ten years I spent more time in the vineyards instead to travel for the wine business because I love work in contact with nature and because I want to follow the road of my father as a winemaker. I consider my role in our winery as a custodian of the work done by my parents, and not as a revolutionary who wants to overturn the past.

Ep. 1337 Enrico Coser | Italian Trade Agency Masterclass Wineries In Germany Apr 06, 2023
    Show notes

Welcome to Episode 1337; part of our new Italian wine interview series set in Dusseldorf, Germany. Today Joy Livingston interviews Enrico Coser of Ronco dei Tassi winery.

Stevie Kim and her team travelled to Dusseldorf, Germany this March to collaborate with ITA, the Italian Trade Agency. ITA was organizing some incredible Masterclasses featuring the best wines Italy has to offer. Each masterclass was led by the Master Sommelier Eros Teboni (awarded Best Sommelier Worldwide in 2018), and they wanted us there to document the amazing 3 days!

Tune-in each Thursday as we bring you the great interviews that unfolded over the course of 3 days.

    More about today’s guest:

Enrico Coser’s wine was featured in the “Bordeaux Blends of Italy” masterclass.

The Friuli region, located in north-eastern Italy on the Slovenian border, is renowned for being home to some of Italy’s most avant-garde winemakers. Ronco dei Tassi, however, stands out from the crowd with its firm commitment to tradition, producing layered, elegant wines that speak of the terroir and the land from which they come. The winery is guided by Fabio Coser, previously a consulting oenologist in the area, who purchased the estate in 1989 with his wife, Daniela. At the time, the property comprised about 22 acres, 10 of which were already planted to vine, in the heart of the Collio Goriziano in the township of Cormòns. The name of the winery itself is closely tied to the region: “ronco” is the word in Friulian dialect to describe a “hillside, terraced vineyard,” while “tassi” refers to the badgers who often pay visit to the vineyards to enjoy the harvest’s juiciest grapes.

Sons Matteo and Enrico have joined the family business and the estate has grown to over 30 hectares (75acres), 18 (45 acres) of which are planted to vines. The remainder of the land has been left as woodland, considered essential to maintaining the delicate balance between cultivation and forest, allowing sustainable agricultural practices to be implemented most effectively. The estate is ideally positioned at the boundary of the Plessiva Natural Park, an oasis protected by the Friuli region, and as such provides a safe haven and ideal habitat for local flora and fauna to flourish. The family firmly believes in the value of protecting this little corner of paradise, acting as a guarantee to ensure the future of this splendid territory and its wines.

    More about the winery:

    More about the interviewer:

Joy Livingston is the Producer of Italian Wine Podcast. Narrator extraordinaire and Scienza whisperer Joy Livingston has been known to edit the occasional book from time to time. When Joy is not busy Producing the podcast she is also working hard on the Mamma Jumbo Shrimp YouTube channel where many of the interviews stream on video!
