    I don’t have a lot of time, you probably don’t either, and even if you do, most of us don’t necessarily want to spend all of it doing chores. Some chores you might like, some are therapeutic and calming and give you a sense of accomplishment and purpose, and that’s fantastic. But I think it’s always good to evaluate what we’re doing every day, what we’re not doing every day, and what matters most.

    Lazy Genius of the Week: Paula Kay Myers

    Love the soup podcast and need to share with you my LG gift idea. My 80-year-old dad and stepmom, like most 80-year-olds, don’t need or want anything. They actually act bratty when receiving a gift. But 2 years ago I had a brainstorm! I wrapped a case of 12 quart mason jars in Christmas paper and when they opened it I told them it was a soup of the month club. Perfect gift - consumable, practical, and something to look forward to. And I always delivered it with fresh bread. It also obligated me to a monthly visit with them. We were about 45 minutes apart at the time and they absolutely loved it. And began asking me in March when they had the option to renew. My husband and I have since moved 12 hours away so this year when I was visiting after Thanksgiving, I filled their deep freezer with bags of soup and wrapped up 2 cute soup bowls. Best gift I’ve ever given.

I think it’s important to name what we can be a genius about and what we can be lazy about, but there are things we have to do that we don’t love doing.     We’re about halfway into September, and even though temperatures and even seasons depending on your hemisphere are different right now, something about life shifts when we hit September. And whenever I hit a shift, the importance of my environment is more obvious.

    Creating a space that feels safe and cozy, whatever that looks like for you, is important for your mental health. This episode will give you steps on how to do that, but the important thing here is to name the importance of your environment when you’re in the middle of something long or at the start of something new.

    We’re continuing our pizza conversation this week by talking about cheese, toppings, sauce, tools, and how you bake it. If last week’s episode on pizza dough didn’t convince you I’m a nerd over pizza, this one will. I’m realizing I have so much to say that I could have an entire series or even whole separate podcast on pizza. I love it so much and keep learning every time I make it. I hope the more you make it, the more you’ll learn and love it, too!

    • Since I make pizza almost every week, it’s important to me to have a pan I love. I use this cast iron pizza pan. My friend Michael believes his pizza steel is best, and my cooking sister Bri McKoy uses a pizza stone. Use whatever makes you happy.
    • Having a pizza peel handy also makes pizza assembly a breeze. I use this wooden one (and store it with my cutting boards). They also make aluminum ones, so again, find what works best for you if you want to invest in one.
    • And as I said last week, a bench scraper is one of the best tools to have in your kitchen. Amen.
    • Bonus tip from Michael — how to make hot honey: Warm up honey in a little pan, add in chopped dried chiles, and warm that together for about 15 minutes on the stove. Then let it cool and put it back in a bottle. He drizzles that on pizzas when they come out of the oven or by the slice and swears by it.
