Barrell Bourbon with Joe Beatrice Jul 03, 2020
    Show notes

Barrell Bourbon roared onto the liquor scene less than a decade ago with a plan. Founder Joe Beatrice had tired of his career in tech and made the big leap into the whiskey business right as the bourbon craze hit high gear. He left New York City and moved to the heart of Bourbon country in Kentucky.

Joe decided that he would source only the best distillates, operate ethically in an industry known for snake oil sales and slick marketing campaigns, and they would work diligently with the blending process to make sure that each batch is unique but still appeals to whiskey fanatics. A plan like that should have meant that Joe spend would spend decades before getting any recognition – particularly in the crowded Bourbon category. But the accolades came quickly and he now sources spirits from all over the world from scores of producers, has branched out into specialty releases of rum, and is excitedly looking to the future of American rye whiskey.

American Hustle with Eli Sanchez Jun 18, 2020
    Show notes

Eli Sanchez spent the last 5 years working as a bar manager, General Manager, and cocktail guru for two of our restaurants, The Inferno Room and Rook. But, like many of us that cut our teeth in the 90’s, craft cocktails weren’t even part of the experience in the beginning of our careers. He spent 12 years working at one of the city’s old school watering holes, The Elbow Room, when one of his colleagues left to work at Indianapolis’ first real craft cocktail bar. Eli shunned the move initially, believing that so much though wasn’t necessary when it came to drinking. But he soon after got hooked on the scene. And that set the stage for his career.

He spent the following decade honing his craft at every craft cocktail bar that would give him a shift. His hustle to learn from anyone that was willing to teach has paid off. In recent years, he’s won numerous cocktail competitions, worked at the best bars and restaurants. But he got into a rut in 2019 and needed to shake things up. He made a leap to New York in late 2019 to work at Pouring Ribbons and Mother of Pearl. Unfortunately, he moved just a few weeks before the COVID-19 pandemic hit the United States. He’s now in limbo, navigating a new city and new jobs.

Toward the end of the show, we also get into a conversation about cannabis legal reform and modern research into cannabis benefits.

We’re all over the place, but these things happen when I have old friends on the show. These conversations over the past months haven’t only brought new episodes into existence, but serve a release for those of us that have been cut off from the social nature of careers. It’s cathartic. It’s therapeutic. And these recent episodes serve that as much as any professional purpose.

Brown and Balanced with Josh Davis Jun 03, 2020
    Show notes

Josh Davis and I had been planning on doing an episode for several weeks. But we both got busy and never got on that Skype call. And then May 29th came. On that day, Amy Cooper weaponized the police in Central Park while the Minneapolis Police Department murdered George Floyd. Four days later the country was on fire, literally and figuratively. So Josh and I made time for that phone call. A police station in Minneapolis was still on fire as we talked. And this was just the beginning of protests that are currently spanning the country as this episode posts.

While Trump hides in his bunker and stokes the flames of racial injustice, Josh and I discuss what is to be a black man in America, how he’s used his profile in the industry to become a mentor for young people and bartenders, building a community in his bar, and about Brown and Balanced – a traveling series of popups showcasing the talents of the black and brown men and women that are overshadowed by their white counterparts. For Josh, every step is a step forward.

If you’re EVER in Chicago, and this virus ever permits us to go out to bars again, go see Josh at 16th Street Bar. It’s truly one of the best nights out you’ll have in Chicago. Especially if Josh is behind the stick (to be fair, it will be equally as fun with Sherri behind the bar, too)

Remote Control with Nico Palazzi May 20, 2020
    Show notes

Nico Palazzi is one of the country’s most respected importers. His company, PM Spirits, is known as THE purveyor of fine spirits (listen to our previous show, Unicorn Booze with Nico Palazzi). He is constantly traveling, tasting, choosing casks, and working with small, craft producers all over Europe. In March, that all ground to a halt. Some of the places most affected by COVID-19 – Spain, Italy, New York – have been the most important business hubs for him.

As the country closed restaurants and liquor stores, Nico himself went into quarantine with his family. As the father of a young daughter with a rare form of epilepsy, he is taking this quarantine very seriously to potentially save her life. His current plan is stay at home for the next 18 to 24 months, or until there is a vaccine.

So now he has to rethink how he conducts his business. Or does he? Being the founder of a small import and distribution company means leading a team of salespersons and producers that are already spread out all over the world. A lot of his work is done from 10,000 feet in the air. One person can’t be in three countries simultaneously. So, as Nico examines what the future holds, we just may be looking to him for guidance to see how to realign ourselves with the new, no-contact way of operating. This is New Earth. We need to adapt.

48 Days Later with Sother Teague May 06, 2020
    Show notes

Sother Teague has built a small empire in New York City. He’s a partner and operator of numerous bars, including the acclaimed Amor y Amargo in the East Village. He’s the co-host of The Speakeasy. He’s been a professional chef. A culinary school instructor. A mentor. And now he’s come to the toughest obstacle of his career – getting through a global pandemic.

We’d planned on chatting about the good times, but the good times aren’t on the horizon yet. The old ways of doing things are gone. And the new ways aren’t clear yet. As Sother says, we’re on our way to New Earth. And we desperately need a navigator.

The Bartender’s Handshake with Brent Falco Apr 22, 2020
    Show notes

NOTE: This episode was recorded a week before the country went on lockdown from COVID-19.

The Bartender’s Handshake is a phrase used to define a way in which bartenders often greet one another upon arrival to each other’s bars, or as a thank you on the way out the door – with a shot. And over the last decade, that “handshake” has increasingly become synonymous with one particular bottle… Fernet-Branca. Today’s guest is the embodiment of hospitality, so it’s fitting that she works for Branca USA. You’ll want to grab a bottle of Fernet-Branca (the hyphen is important!) and a cocktail for this episode. We had a good time recording this one… just before the good times came to a close.

Devil’s Reef with Jason Alexander Apr 08, 2020
    Show notes

This week’s episode comes during a time of uncertainty for the restaurant industry. Will we make it out of this? If we do, will customers come back for cocktails? Is this a Second Great Depression? While those things are yet to be answered, there is one thing to remember. The original exotic bar was born out of the Great Depression – Don The Beachcomber! It is with his spirit that I’d like you to listen to this interview with Jason Alexander (aka Tiki Commando) and Tommie Selmon of Devil’s Reef in Tacoma, Washington. Jason and I have been friends for years, but have never met in-person until this interview. And he’s exactly the kind of guy you want at the bar when this crisis is over with – a guy cut from the same cloth as Donn Beach himself. He’s traveled the world as a Marine, lives on a boat, and is a perfectionist about his drinks – constantly fiddling with cocktails until there are several different “improved” versions. When times get rough, it’s time for an escape. So, enter the depths of Devil’s Reef and take the Third Oath.

Shift Drink AMA, COVID-19 Edition Mar 25, 2020
    Show notes

Strange times we’re in. A virus has killed tens of thousands already in the last few months, all non-essential businesses are closed, and the entire hospitality industry disappeared overnight. This podcast has always served as a temporary escape for me – a way to ignore what’s going on around me, if only for an hour (in the same way Tiki does).

It’s a way for me to connect with guests in the restaurant industry and get unique perspectives on a variety of topics. But this week, I’m connect with you, the listeners! I accepted questions via social media last week and tried to answer as many as possible. I didn’t get to everyone, and may end up doing another one of these before this is all over. WARNING: If you find my voice irritating, this isn’t the episode for you.

Sven Kirsten, Tiki Archaeologist Mar 11, 2020
    Show notes

Sven Kirsten is one of the key figures in the modern Tiki revival that we are now enjoying in the 21st century. As a young cinematographer, he moved to Los Angeles to pursue a career in filmmaking. As history would have it, the city was undergoing a sort of devolution and departure from the Mid-Century design that had influenced Southern California during the preceding decades. Motels were being demolished and the Polynesian palaces of the 1960’s were being closed and remodeled to fit into the 1980’s aesthetic. A handful of curious fanatics took notice and set out to preserve an era that hadn’t yet been deemed to be of historical significance. Sven was one of those people. When he saw that no one had documented this ephemera, he published The Book of Tiki and went on to write Tiki Pop, Tiki Style, and The Art of Tiki. And he’s not slowing down. He is still active as an urban archeologist and in preserving the last vestiges of the height of Polynesian Pop.

Revisiting Shochu with Tetsuro Miyazaki & Lindy Wyss Feb 21, 2020
    Show notes

It’s been several years since we discussed the often confusing subject of Japan’s native spirit – Shochu! Today I welcome Tetsuro Miyazaki of iichiko Shochu and Lindy Wyss of Davos Brands to add to our knowledge base of Shochu culture, the importance of koji in the fermentation step of production, and how United States bartenders are helping to shape new Shochu products that are destined for cocktails.
