David and Rob interview Jaime Jackson of LP Streetfood in Cedar Rapids about Iowa's role as the first in the nation to caucus, what "Iowa nice" really means, and how the pandemic impacted LP's business as well as local politics.
This week's signature cocktail: “Bonfire Old Fashioned”
1.5oz Cedar Ridge Bourbon (any bourbon with a kiss of malted rye in the mash bill will be fine)
.5oz Aged Fruit Brandy (my local distillery Cedar Ridge makes an excellent aged brandy, however, a calvados or applejack will work in a pinch)
.5oz Burnt Sugar Syrup (recipe to follow), you can sub simple or Demerara syrup if need be, but the flavors will be different
3 Dashes Orange Bitters
Measure and pour all ingredients into a mixing glass with ice, stir with agitating the ice by moving your spoon along the outside edge of your mixing glass to slowly incorporate and dilute your cocktail. After about 15 rotations, strain your cocktail into a rocks glass over a large ice cube. Peel a nice swath of an orange peel, and use a lighter to slightly warm up the peel on both sides. Hold the peel slightly pinched with the outside of the peel directly over your cocktail, ready to express the oils, but don’t quite yet! Light a match or a lighter and express the oils of your peel directly into the flame over the cocktail. If you did it right, the oils from the peel will ignite over the cocktail. Drop the peel into the cocktail.
Burnt Sugar Syrup
1c White Sugar
3/4c Water
Take a small saucepan and add your sugar to it. Heat the sugar over medium to medium high heat, constantly stirring. The sugar will start to clump, then start to brown. Heat the sugar stirring constantly until bubbles begin to form.
!!! Danger !!! Proceed with caution!
Turn off the heat, and very very slowly, add your water, little bit by little bit, stirring to combine. The sugar and water will have a violent steamy reaction with the first few splashes of water, but it will combine into this delicious syrup that tastes like toasted marshmallow. Stir until the water and the sugar are completely combined.
Bonus cocktail recipes!
Jaime warns, "I DO NOT RECOMMEND MAKING OR DRINKING EITHER OF THESE COCKTAILS!"
"The Donald Trump" AKA “Make a Negroni Spagliato a Mistake Again”
Jaime says,"'Spagliato' means 'mistake'… this one does use all American ingredients…do I need to say more?"
1oz vodka. It doesn’t really matter what kind, you can lie and say it’s ultra premium
1oz St. George Bruto Americano
3oz California Sparkling Wine
1 drop Orange Food Coloring
Traditionally, a Negroni Spagliato is Campari, Sweet Vermouth, and Prosecco, but we are going to…. Switch things up. Build this cocktail over ice and stir to make sure the obnoxious orange color comes through consistently. Make sure you’re using a “manly” rocks glass. Garnish with a red cocktail napkin folded into a hat on top of an orange slice.
"The Joe Biden" AKA "The Mind Eraser”
Jaime says, "I want to make a riff off the 80s and 90s popular (but not super delicious) cocktail called 'The Mind Eraser' because we all forget things, but an old man in very important political position appears to forget quite a bit."
1oz Peanut Butter infused white whiskey
.75oz Coffee Liqueur
.25oz Raspberry Liqueur
.5oz Orange Gatorade Reduction
3oz Soda Water
Build in a collins glass, layer the ingredients carefully so you get a strange color variation from black to pink to orange to the clear soda water on top. Serve with a straw and garnish with a small slice of a PB&J on a skewer, in case you get peckish.
