Chef Kurt Kwiatkowski and I met during an event in Sacramento where we played with Walnuts for a few days. Kurt’s story is a great one. He’s classically trained and is currently the Executive Chef for Michigan State University in Lansing, MI.
Chef Kwiatkowski tells stories about how they are handling being shut down, the select few people that are being fed on campus, and the sheer volume and organization that it takes to oversee such a massive operation.
Such a great time with a great guy for a great conversation!

Chef Brian Malarkey! The outspoken chef has been showcasing his culinary talents up and down the West Coast for a few years before settling in the San Diego/Orange County area!
His latest venture, Animae, is an interpretation of Pan Asian American cuisine that is inspired by the stunning, modern architecture of the building where the restaurant is housed.
Malarkey also serves as the Partner of eight other concepts in San Diego and Orange County, including Herb & Wood, Herb & Eatery, Herb & Sea, NIMA Cafe, Farmer & The Seahorse, and two Green Acre locations, and Herb & Ranch in Orange County. He was the founding executive chef/partner of Searsucker and Herringbone restaurants, which sold a majority stake to Hakkasan Group in 2014. Under his guidance, the brands expanded both across the country and internationally to 10 locations. In 2018, Malarkey resigned from Hakkasan Group to focus on the Puffer Malarkey Collective restaurants.
Currently a contestant on Bravo’s Top Chef All-Stars and past Top Chef finalist, Malarkey appears as a judge on Food Network’s Guy’s Grocery Games, makes regular appearances on the Today Show and Good Morning America, and was the winning mentor on ABC’s The Taste, which he co-hosted alongside Anthony Bourdain, Nigella Lawson and Ludo Lefebvre. Malarkey has judged a variety of television cooking programs, including Rachael vs. Guy: Kids Cook Off, Chopped All-Stars, and Cutthroat Kitchen, and can be seen headlining food and wine festivals around the country.

This guy started in the kitchen when he was 13 years old with his Uncle Mike, who taught him everything there’s more to know about cooking than just putting food together. His Uncle Mike taught how to cook with respect and love so his guests will savor every last bite of their meals.
This week on Duffified Live, Chef Fucci and Chef Brian Duffy chat about the last few years, the move to his own brick and mortar, his escapades in and out of the kitchen over the last 20+ years, and so much more.

Chef Ryan Peters knew it at age two. He knew he wanted to be a chef at that age! Since then, he’s traveled to and from Key Largo and Pittsburgh. Two very odd cities, two very different cities, but two cities with amazing food programs on all levels.
I met Chef two years ago at his 146 square foot spot in Pittsburgh while out with Chef Chad Rosenthal. We had a great lunch that was prepared so well and so creatively for such a small space. Oddly enough, our paths have crossed despite a 22-year difference!
We discuss his newest undertaking at Iron Born Pizza in Pittsburgh, his role as the pasta chef, and his history and lineage that led him to this exact spot.

You have all eaten this guy’s food. EVERY SINGLE ONE OF YOU has at least tried his food before. How do I know that? Chef Mike Haracz was on the executive culinary team for McDonald’s. He’s since left and is now talking about his experience there and what his plans are moving forward.
Chef Haracz is a character and caught my eye a few months ago after he did a commercial for Wendy’s despite the fact that he was the chef for Micky D’s. He is a quality individual with a passion for social media and what its reach is.

Duffified Live: Chef Amanda Freitag of TV’s “Chopped”

Chef Amanda Freitag is a seasoned chef with 25 years under her belt and knowledge amassed through a series of wise career choices that included long term stints at spots such as Vong, New York, Verbena, under chef Diane Forley. After Verbena, Freitag traveled to France and Italy, working for a short while at L’Arpège restaurant under Chef Alain Passard in 1999.
In 2003, Freitag and restaurateur Godfrey Polistina opened the Upper West Side restaurant Cesca Enoteca and Trattoria.
Freitag was chef de cuisine at Cesca, before moving to an executive chef position at The Harrison. On September 3, 2010, The New York Times reported that Freitag would be leaving the Harrison, and the restaurant’s owner, Jimmy Bradley, will return as a chef.
Freitag is a frequent judge on the culinary game show Chopped.
She is currently overseeing her brand and has moved into the digital era via a YouTube channel titled “It’s Easy AF,” a great series of quick “How-To” videos that will get you cooking in no time!
We discuss the kitchen, TV, branding and marketing, cooking, and life’s lessons. It’s just a generally nice chat between two chefs.

An encounter in Long Beach, CA brought Chef Brian Duffy and Rick Steele together for what would be a friendship that has been around for the last 8 years.
Rick Steele is a self-made man of many things. He is an American entrepreneur and Founder and CMO of Selectblinds, LLC, an online e-tailer of independently branded window fashions. In 2016, his company, SelectBlinds.com, became the first retailer to stop selling corded custom window covering products, leading industry efforts to change manufacturer safety standards and prevent the deaths and injuries that result annually from children who become entangled in window covering cords. He is also a business speaker, philanthropist, and author of business and children’s books.
Today’s conversation talks about his latest accomplishment, a World Marathon Finisher. Yes, Rick has just finished seven marathons in seven days on seven continents. This title is a massive one for Rick who believes that “the brain lies to you.” The brain said “I was done” yet I just did five more push-ups.
Rick’s vision is one of the great things but the most important thing to him is his family, the ability to maintain a great home life, and a stable positive environment. That’s put Rick and his family in a great place and you can feel his pride when he speaks about his family!

I walked on set for my first episode of Bar Rescue and was greeted by an intense smiling face. Little did I know, twelve years later, she would not only be an integral part of my business but also a friend.
JoAnn Cianciulli, a native New Yorker who studied film, made the move to Los Angeles at the age of 22 and decided that there was more fun with food than there was in casting and just production. Hence, the term “Culinary Producer” and Dirty Dishes Media were born.
Jo has worked on such shows as Top Chef, Bar Rescue, Food 911, and so many more. With thirteen books under her belt, I get to work with Jo travelling all over the country working with GE in our spare time!
Jo has been a constant source of professional friend and I’m so excited for her future!

Andrae Bopp, a St. Louis native, has been passionate about food and wine his entire life. Food was always at the center of his life from his high school days in Heidelberg Germany, to when Andrae graduated with top honors, from the French Culinary Institute located in New York City.
In 2012, Andrae opened a permanent restaurant inside the Cenex Convenience Store and has been garnering National attention and awards since, including: Pacific Northwest Caterer of the Year (2012), Best Food Truck Restaurant in North America (2016), Best Gas Station Breakfast in America (2016). And as been featured in The New York Times, Travel and Leisure Magazine, USA Today, Food and Wine, Wine Enthusiast, Sunset and many other Regional and National publications.
Andrae’s Kitchen has also been featured on The Cooking Channel’s show “Food Paradise,” as he continues to push the envelope with his creative “Gas Station Cuisine”. Over the last 15 years, Andrae has redefined food and dining in the Northwest with his creative and out of the box thinking.

Born in Australia and now living in Austin, TX., Jess has amassed quite a resume via her knowledge of meat, smoking and grilling, and all around carnivore cookery.
We have a chat about meat, meat, some more meat, and even some BBQ stuff. Jess is very wise woman and is a master of her craft! She is truly the Queen Of All Things Meat!

Chef Monti Carlo, Puerto Rican born and raised, has led a pretty amazing nineteen years. We discuss everything from marriage and divorce to raising smelly pre-teen and teenagers all the way into how she got her start on the show “Masterchef” and how it’s changed her life.

Its a sad week for most of us in the culinary world & even in the world of social media… a friend has passed away & it happened at a very young age, 44 to be exact.
Chef Carl Ruiz, a dude that I got to know over the last year & felt lucky enough to be able to call him a friend.
A few months ago I had the honor of chatting with Carl after a crazy lunch in Philly @ the reading terminal market, where I witnessed the beginnings of the world of #Ruizing.
Carl had an infectious almost boyish personality, his laugh & comments made people stop & listen & its one of the reasons that I wanted to air this episode one more time. I feel that we bonded a bit on this episode & im really honored to say that I had the opportunity to spend some time with him.

This week on Duffified Live, Chef Brian Duffy chats with Chef Tu David Phu about pretty much everything. Immigrant, chefs, politics, food, quality of food, and even a quick mention of stuff that we hate to see in kitchen or on menus!
Chef Tu David Phu is a Vietnamese-American with family roots in Award Winning Fish Sauce Production, Hung Thanh 1895. After attending culinary school, Chef Tu’s stints included the nation’s top Michelin-rated restaurants: Chez Panisse, Quince, Acquerello, Daniel Boulud, Breslin, Gotham Bar & Grill and Gramercy Tavern. After serving as the Executive Chef of Gather in Berkeley, Chef Tu left to concentrate on his weekly pop up dinners. His pop-up series focusing on a Vietnamese tasting menu of dishes that reflect his childhood has garnered him press and accolades including the San Francisco Chronicle naming him a 2017 “Rising Star Chef.” Long before cooking professionally, Chef Tu had a rich culinary background. His family hails from the Island of Phu Quoc, in South Vietnam. His frequent trips to Vietnam immersed him in the practices, ingredients, techniques, and flavors of Vietnamese cuisines. Tu’s culinary style reflects a wide range of cooking cultures – from the American culinary greats, classical European traditions, to his Mothers’ generations-old wisdom handed down grassroots-style.

I am so stoked to chat with Rebecca West Hensinger, a Pennsylvania native who has transformed her love for education and changing lives and turned it into a platform for her 2020 run for Mrs. America!
Rebecca West Hensinger is Mrs. Pennsylvania America 2019. She was awarded the title on April 6, 2019 at the Ware Theater in Lancaster, PA. Her pageant platform is “Educational Equality.” In August, she will compete at the National Mrs. America competition in Las Vegas, NV.
Rebecca is an award-winning Ironman Triathlete. She has completed triathlons on four continents and was a member of Team USA triathlon 2018. She has been awarded All
World Athlete Ironman status 3 years in a row and currently holds Silver status for her international top 5% age group finish times. She is currently in active training to climb Mt. Kilimanjaro with her husband.

Let’s talk MEAT…….and some restaurant stuff. This conversation with Nick Solares is like having a conversation with a master of their domain.
Nick is an Englishman in NYC with a doctorate in the art of meat. We talk about everything from eating to experiencing the multitude that the city has to offer as well as his experiences from his past shows to his newest project called “The Meat Life.”
He is a food writer, photographer, TV presenter, and an expert and thought leader on meat eating. He is an advocate for dry aged steaks, fresh beef hamburgers, real wood smoked barbecue, heritage breed farming, and eating nose to tail.
Nick’s career began as a hobby when he published Beef Aficionado, one of the pioneering food blogs back in 2006. Nick has over a decade of experience in the food space with over a thousand published articles and many hours of video content online.
From 2007 – 2014, he wrote and photographed for the Serious Eats family of websites. First, reviewing hamburgers for the “A Hamburger Today” blog, pizza for “The Slice” blog, as well as reviewing restaurants and writing the popular Steakcraft column for “Serious Eats.”
Nick was the creative director for celebrity butcher Pat LaFrieda’s Big App for Meat, produced by Zero Point Zero Productions. The app covers over three hundred cuts of meat, bringing a butcher’s insider knowledge to the masses. It was named App of the Year by Apple in the Lifestyle section in 2011. In 2013 Nick served as a food and beverage columnist for amNew York, a commuter newspaper with a circulation of 300K.
As an editorial photographer Nick specializes in food, kitchen and architectural work. He has a decade long archive and his photos have been featured on Eater.com, Serious Eats, Zagat, Grub Street, Time, Newsweek, NY Times, NY Post, AM New York, and Wine Spectator.
Nick worked at Eater NY from 2014 – 2017 as senior editor and then as restaurant editor where he reported on the NYC dining scene, oversaw the influential Eater 38 list; and continued his behind the scenes coverage with his Hot Dish and Meat Feast columns as well as maintaining his regular diet of hamburger reviews.
In 2015, Nick began hosting The Meat Show (TMS) for Eater Video. It followed Nick’s exploration of meat culture across the US and the world. With over 100 episodes online, TMS visited Japan, UK, New Orleans, Texas, Philadelphia, New Jersey, and shot extensively in and around NYC. Hosted on YouTube, Facebook and Eater.com, TMS amassed a devoted following and videos have garnered millions views. TMS received back to back NY Emmy nominations in 2016 and 2017 in the Informational / Instructional category.
In 2018 Nick began production on a new video show called “The Meat Life.”

She has taken the groundwork laid by her mother and the supportive guidance of her father, Perri has done all of that and most importantly, she’s winning.
Perri has been in movies, TV shows, commercials, plays, and has been racing Spartan style for the last 4-5 years. With over 70 races and 3 podium spots, she is a force to be reckoned with. Perri is an intelligent woman with a plan….. a plan that takes her to races all over the country and still have time to follow her true passion which is acting and spending some time in front of the camera!

Year after year, Dylan amazes me and his professionalism and personality shine through in his work and in his demos.

Duffified Live: Former Eagles WR Draft Pick Freddie Mitchell

Anybody who lives in Philly knows what 4th and 26 means and all other sports fans outside of Philadelphia know the name Freddie Mitchell for his dislike of Donovan McNabb and his hardcore attitude regarding the NFL.
Freddie and Chef Brian Duffy sat for a bit to chat about his earlier days in the game, excelling in multiple sports, and his final decision to go to UCLA to play football. After one injury and final recovery, Freddie made the decision to go pro after just three years of college. As a first-round draft pick of Philadelphia, Freddie played four years for the Eagles and played for a few other NFL teams but “never really got the accolades that he deserved.”
Freddie is a HUGE personality whom Chef Duffy has become friends with. Now, Freddie is working on a charity center in Philly as well as a few secret recipes that are in development for a launch in the fall.

Stop bitching and complaining to an online “evaluation” site. Please. Just stop. Here’s what you don’t realize…. apps like Yelp are a pay to play sites, which means for restaurants to see true reviews in real time, they need to PAY to be on there.
What does that mean to you? You can complain all you want on a social media site but as operators, we don’t take these reviews as real or seriously. We now have to do damage control, have to find out if we can delete it, and reply to you or else you complain that we “don’t care about the business or that we don’t care about the guest” or we reply and get told we’re “being defensive.”
I have a better solution. Take five minutes and email an owner or a manager. Better yet, write us a letter. If we see that you’re taking the time to send a genuine concern, that’s something we can reply to and handle accordingly.
So…..how do I really feel? #FuckYelp

Duffified Live: Tori Lubecki, Former Aerialist of Cirque du Soleil

Dinner with ten chefs, all good friends, no shortage of personalities, a group of very dynamic individuals all sitting down for a meal of Mongolian hot pot when a five foot tall energy force walks through the door.
Tori Lubecki, introduced to me by my dear friend Panini Pete, was born in Alabama and got the itch to perform when doing ballet and dance as a two year old. She progresses through life, becomes a vegetarian, and tries yoga, doubting it’s benefits until the realization hits her…. Wow…. this stuff has changed my life!
Chef and Tori spoke during this meal for a few hours and have been following each other on social media since that time. There are times when you meet someone and are generally amazed by their stories. It may not be a big deal to them but to the onlooker…. it’s great! She has spent the last nine years as a lead aerial artist for Cirque du Soleil and I had to hear more!
Tori trained in ballet at the Alabama School of Fine Arts, Joffrey Ballet and City Ballet of San Diego. She has been performing an aerial straps duet for Cirque du Soleil since 2008 and was the Resident Choreographer for Spiegelworld’s Absinthe for five years. Her nonprofit organization, Philanthropy ENT uses performance art to generate funds that help liberate victims of domestic violence. She has experience producing, writing and directing live productions and most recently has completed a 200 hour Yoga Teacher Training through All Yoga in Bali. Her extensive background in performance art and yoga will help our students to connect with themselves on a deeper level and access the creativity and peace that lies dormant within them.

Duffified Live: The Mystery Of Duffy’s Cut

A few years ago, my father told me the story of “Duffy’s Cut,” a wild tale of corruption, hidden documents, murder, and the blatant mistreatment of the Irish and what it was like in the 1830s. My father was an avid reader and LOVED history so it was fitting that he would get involved in the story of “Duffy’s Cut” while he was working on his 5th degree, this one was his Doctorate and he was doing it at Immaculata University in the western suburbs of Philadelphia.
Today, I get to speak to William Watson of Immaculata College and Joe Modestine of Doylestown Brewery. William is the author and historian for the entire project while Joe has brewed a beer that is raising money that will assist in the exhuming of the remaining fifty bodies that are buried in this mass grave.
Duffy’s Cut is the name given to a stretch of railroad tracks about 30 miles west of Philadelphia, Pennsylvania originally built for the Philadelphia and Columbia Railroad, which later became part of the Pennsylvania Railroad’s Main Line. In June 1832, a contractor and fellow Irishman named Philip Duffy hired a group of 57 Irish immigrants to lay this line through the area’s densely wooded hills and ravines.
The workers came to Philadelphia from the Ulster counties of Donegal, Tyrone, and Derry to work in Pennsylvania’s developing railroad industry. Less than two months after their arrival, all 57 are believed to have died during the second cholera pandemic. While most died of the disease, forensic evidence suggests that some may have been murdered, perhaps due to fear of cholera in the area and surrounding counties. They were buried anonymously in a ditch outside of Malvern.
The Duffy’s Cut Project began undergoing archaeological excavation in August of 2004 by a research team headed by Dr William Watson from Immaculata University, Rev. Dr Frank Watson, Earl Schandelmeier and John Ahtes (who passed away in 2010). The team took on the momentous task of archival and archaeological search into the life and death of the forgotten men of Duffy’s Cut. Seeking to provide insight into early 19th Century attitudes about industry, immigration, and disease in Pennsylvania. On March 20, 2009, the first human bones were unearthed, consisting of two skulls, six teeth and eighty other bones.

Chef Brian Duffy and Chef Fabio Viviani! Here we go, folks! These two are on a mission to change the hospitality scene and what goes on behind the scenes. They talk about everything from growing up in the business to creating the perfect working environment, plus a few other stories.
Chef Viviani has harbored a passion for food since his childhood growing up in Florence, Italy. Between training in Italian and Mediterranean cuisine at the top hospitality schools and working with culinary luminaries such as Alessandro Panzani and Saverio Carmagini, Viviani also owned and operated several concepts by the time he was 27 including two nightclubs and five restaurants in Florence. Although a well-respected businessman in Italy, he was ready for a change and in 2005, Viviani moved to California where he opened his first USA based restaurant Café Firenze in Moorpark, CA.
Teaming up with one of Chicago’s restaurant consulting group, Dine|Amic, Viviani opened Siena Tavern in Chicago in 2013 and the following year he opened Mercato by Fabio Viviani, a quick-service Italian concept with branches in Chicago and San Diego. In 2015, Viviani continued to make a name for himself in Chicago by opening Bar Siena and Prime & Provisions. In 2016, he expanded to the LAX Delta terminal with the opening of Osteria by Fabio Viviani while opening additional Mercato by Fabio locations in Tempe, Phoenix, Cleveland, and Benton Harbor. In 2017, Fabio opened the Press Room in Detroit hot on the heels of his February opening of Portico by Fabio Viviani in New York’s del Lago Resort & Casino.
Looking ahead to 2018, Viviani plans to open restaurants in Tampa, Detroit, Washington D.C. and Oklahoma City. He also plans to open high end food courts in Indiana, Pennsylvania, and West Virginia and Missouri before the end of the year.
Best known for his television debut on Bravo’s hit series Top Chef—earning the “Fan Favorite” title—his on-screen appearances have propelled him to become one of the top culinary names in the country. He is a recurring guest on national television shows such as Good Morning America, The Rachael Ray Show, The Chew, and countless Food Network Shows such as Cutthroat Kitchen: All-Star Tournament, which he won. In February 2017, he also released “Fabio’s Kitchen,” a 52-episode cooking show hosted on YouTube.
Off-screen, Viviani is a regular headliner at global food events and aside from his restaurant businesses, Viviani also owns a Maine-based seafood delivery service called Lobster by Fabio and a winery in Sonoma that produces the five wine varietals in the Fabio Viviani Wine Collection.
In addition to having his own lines of cookware and culinary gadgets, he has also been a proud spokesman for international brands for the last decade including Arnold Premium Breads (2014/2017), Legends of Europe (2015/2016) Bialetti Cookware (2011/2017), Bertolli Olive Oils (2012/2015) and Johnsonville Sausage (2016/2017). He has authored four successful cookbooks: Café Firenze Cookbook, New York Times Best-Seller Fabio’s Italian Kitchen, Fabio’s American Home Kitchen, and most recently Fabio’s 30-Minute Italian released in May 2017.
Among Viviani’s other passions, he has a knack for business and entrepreneurship. A prolific tech investor and business speaker, not only has he delivered over 300 keynotes in the past 7 years, but he has been featured at several Fortune 500 companies’ corporate functions to share expertise in branding, social media, and marketing. Most recently, he merged his mind for innovation with his passion for food when he collaborated with Chicago-based Sapphire Apps to release Food Porn Emoji by Chef Fabio Viviani, the first HD food emoji keyboard on the app market.
His varied accomplishments have impressed many, resulting in his induction into the Chicago Culinary Museum and Chefs Hall of Fame as 2017 Chef of the Year on March 8, 2017. Following Viviani’s initiation, the mayor of Chicago also declared March 8, 2017 to be Chef Fabio Viviani Day in Chicago, encouraging Chicagoans to recognize his achievements and contributions not only to his home city, but also to the nation’s culinary scene.

Zahir Carrington and Craig Moore (of LeHigh and Northwestern alum) are two of the six men that make up Team Princeton 3×3, the front runners to represent the USA in 3×3 Basketball’s inaugural year as an in Olympic sport. These two Philly natives hold down successful careers, family lives, try to grab some personal time, all the while training as future Olympians.
In 2018, they traveled over 100,000 miles playing in tournaments all over the world and the schedule only gets more intense this year.

Erick Castro’s cocktail empire began at San Francisco’s Rickhouse and Bourbon and Branch by searching for obscure pre-Prohibition era recipes, methods, and ingredients. Consistently acclaimed as one of the spirits industry’s elite, Castro is widely recognized for his beverage programs including Esquire’s Best Bars in America, Food & Wine’s World’s Top Bars, and countless nominations at the prestigious Tales of the Cocktail Spirited Awards. In 2013, Castro partnered with San Diego-based hospitality collective, CH Projects, to launch Polite Provisions, earning recognition as Imbibe Magazine’s 2014 Cocktail Bar of the Year, Food & Wine’s Best New Bars in the U.S., and Best American High Volume Cocktail Bar by Tales of the Cocktail’s Annual Spirited Awards in 2014. Next in the CH Projects’ family, Castro pioneered the bar program at the newly opened Raised by Wolves already garnering attention from Afar Magazine, Forbes and Eater.

Oh yeah…..he just climbed Mt Kilimanjaro and hand cycled both the Boston Marathon and the Chicago marathon. I may have forgotten to mention that this was all done on 11” prosthetic legs.
Adam is a brave man, a true warrior, and a loyal being. Listening to him talk is a breath of fresh air in pride and honor. To hear him speak about his fallen brothers during his multiple tours for the Army is eye opening, especially in a day where there is so much negativity and anger.

Chef Michele Ragussis of “Food Network Star” and Chef Brian Duffy met for the first time at the Mohegan Sun Wine & Food Festival where they became instant friends. Both chefs came up through the system of hard knock chefs, rough long days in the kitchen, and long nights out trying to have a social life. Chef Ragussis has since decided to take a step back to focus on herself, her life, and her health.
This conversation walks through Michele’s history as a chef and where she began all the way to her time on Food Network Star. An avid traveler and lover of all things food, it brought her to Providence, where she was the Executive Chef for the Central House, which is also where her tenure as a day to day chef brought her to the realization that she wanted to pursue more of a life for herself. Leaving the helm of a kitchen to purchase a house in the Hudson Valley of New York, private cheffing, and making some badass cutting boards. Michele is also working with Mary Stuart Masterson (Superhottie “Watts” form one of CBD’s favorite 80’s movies Some Kind of Wonderful).

Heidi and Chef Brian Duffy discuss her newest series on E! called “The Funny Dance Show,” produced by the duo at ugly Bro Studios (I know a little about those guys…..they are my brothers), her career, her new apartment that has a full kitchen, and even some things that she needs to have in the kitchen. We also get into the spirituality of being nice to people and working hard as well as a few quick chats about bourbon, whiskey, and the occasional Jack and Coke.
She’s a Los Angeles-based actress and comic who was series regular on DirectTV’s “#Millennials”, a comedic personality on the platform “All Def Digital,” and recently appeared in the feature film “Big Bear” on Netflix.

I love an iconic show and something that stands up to the test of time. Casey Webb has taken on the iconic role as the host for Travel Channel’s “Man v. Food.” You know the concept: Check out three spots around the country. Then, at the last one, he takes the challenge. Will he do it? Will he finish the old 96er? Can he eat that six pound burrito? Well, we don’t really get into all of that but we do discuss the Man of “Man v. Food.”
He is a Jersey guy who is true East Coast, love of family, food, and an experience. We could have talked all day if his manager didn’t cut our bro-fest short! This is a great episode of two guys talking about great food cities, great experiences, Harley Davidson rides, and meeting amazing people on the road.
Casey Webb is a food lover, actor and restaurant business veteran. Since the age of 15, Webb has worked in kitchens, tended bar, and managed restaurants on the Jersey Shore. Beginning in August 2017, his culinary interests will lead him on his greatest adventure yet — a role as the new host of popular Travel Channel series, “Man v. Food.” Network fans will see Webb take on legendary eating challenges and continue the quest to find America’s most delicious, unique eats. He’ll be on the road in search of hometown hot spots with the spiciest, largest and most amazing dishes on their menus.
Webb grew up in Little Silver, NJ. He moved to New York where he works as an actor and comedian. His acting and voice over work have been featured in several national commercials and series including “Boardwalk Empire” and “Inside Amy Schumer.” He is also a proud member of The Collective and The Actors Theater of New York. In 2018, Webb won ‘Best Host – Reality/Food’ in the Cynopsis TV Awards for “Man v. Food.”

Duffified Live: Jennaphr Frederick of Fox 29 Philadelphia

Jennaphr Frederick joined FOX 29 in October 1999 as a general assignment reporter for the FOX 29 “News at Ten.” Since September 2003, she’s been getting up early with the “Good Day Philadelphia” morning team as she covers breaking news and feature stories around the area.
Before joining the FOX 29 family, she worked for two years as an investigative reporter for WKBW-TV, the ABC affiliate in Buffalo, NY. A diverse background has helped Jennaphr to develop a proficiency in news gathering. Before working at WKBW-TV, she was part of the morning team for WTVR-TV in Richmond, VA, a CBS affiliate. She speaks Spanish fluently and takes pride in having worked as an anchor and investigative reporter for KGNS-TV in Laredo, TX, a NBC affiliate and bilingual station. It was there that she started her career and frequently reported stories in Spanish.
Jennaphr is a Florida native and a graduate of the State University of New York, Buffalo with a degree in Broadcast Journalism. She lives in Montgomery County, PA, with her husband, Steve, and their two children. During her free time she enjoys snowboarding, golfing, and traveling.
Jenn Fred, as we all like to call her, is a friend, a great mom, and an incredible human being! She and Chef Brian Duffy discuss TV, being a parent, past segments that they’ve done, as well as what it is like to be a fixture in a city where everybody knows you!

I met Carl when I saw that he was heading to Philadelphia. On a whim, I reached out. We met for lunch, laughed for 2 hours, and have been boys ever since.
Today on Duffified Live, Carl and I talk about kitchens, TV, staff, operations, food, his love for Shopping networks, and his odd “relationships” with on air hosts. This episode takes a few turns but there is some great advice, great info, and a bunch of good laughs!

Social Media. It’s a very weird thing. We look at pictures of people’s meals, children, spouses, pets, inspirational and political posts BUT how much do we really know about them? We see someone attractive and we go to “stalk” them. Wow….that term has so many meaning now, doesn’t it?
I have followed Rob Lawless for about a year now. After obtaining his Degree in Finance from Penn State where he was involved in everything that he could be, which is a great thing for a college kid. He decided to quit his job where he worked for a very reputable financial firm and talked on a passion project that he had sitting in his notes for almost two years.
Rob is a very level headed dude. He likes people and he started a project called “Rob’s 10k Friends.” His goal? To meet, sit, and talk with 10,000 people for one hour a piece. This alone blows me away. Imagine the conversations that you could have. Imagine the people that you could meet.
I enjoyed our conversation so much that I have already passed 10 people Robs email!

Chef Georgeann Leaming is the Executive Chef for the Gordon Ramsay Steak in Atlantic City, NJ. A two time contestant on Food Network’s “Chopped” and former Executive Chef for Gordon Ramsay Pub & Grill, Chef Leaming has owned and operated two very successful properties in the Philadelphia area.
This week, she discusses her career, her time on the Food Network, as well as her roles in Philadelphia and Atlantic City at her new Gordon Ramsay Restaurant.

I love to laugh and I love comedians! For the last year, I have been following Becky Robinson and one day, I see a pic posted by my brother Mike Duffy from Ugly Brothers Studios, to Instagram about a new show that they were doing that involved Becky. I immediately reached out to get her on the show.
Becky Robinson is a comedian/writer/actress/host/supermodel/digital media expert. She was born in Portland, Oregon and is the youngest of three (aka “the accident”). Becky spent the majority of her childhood doing gymnastics and impersonating Fat Bastard. In high school, she won the award for most likely to star in a reality TV show. With stars in her eyes and chicken tenders in her hands, Becky relocated to Southern California to study Business and Television/Theatre at San Diego State University. She began doing stand-up at the Comedy Store in La Jolla and was asked to feature her act at TedX Talks SDSU before graduating in 2013. She moved to Los Angeles and has since become the city’s comedy darling.
Becky has been invited to feature her comedy on Laughs on FOX and NuvoTV’s Cabo Comedy Festival Fresh Faces. She was cast as a lead in the Oxygen pilot, “Straight Up with a Twist,” and worked on the Comedy Central pilot, “Not Safe With Nikki Glaser.” Becky has also worked on YouTube strategy for The Tonight Show with Jimmy Fallon, Late Night with Seth Meyers and Jimmy Kimmel Live!
Currently she is headlining the “American Fuckboi” tour and working on the first season of “Funny Dance show” on E! Based on the hit show developed at The Comedy Store, “The Funny Dance Show” combines comedians and world-class choreography in an hilarious dance battle for charity
Becky & I chat about her growing up in the Pacific Northwest, her career, family, and the current state of comedy with political correctness and her characters that she embraces in her acts. Becky is a HUGE personality with a laugh that is infectious. (I think I even made her laugh a few times>)

Six years ago, I bought a Harley Davidson. The rest is history. The people that I have met simply because of the bike are astounding. Due to the work that I do, I get to meet some pretty dynamic people and Allan Lane is definitely one of those people.
Allan is a Philly guy through and through, growing up in the city, and knowing the streets like the back of his hand. His older brother coerced him to get on the bike for the first time and his Mom immediately made him get off of it.
Now, Allan owns Hard Knocks Motorcycle Entertainment (HKME), which focuses on publishing, talent management, professional event planning/production, marketing, and promotion.
HKME launched the first issue of SportBikes Inc. Magazine in 2010 to provide an authentic voice to the sportbike culture and subcultures, therein. SportBikes Inc. Magazine is unique in that it incorporates all aspects of the motorcycle lifestyle, from local motorcycle clubs and riders to professional road racing teams and riders, including product spotlights, testing, and reviews.
Allan also serves as an event host, emcee, and spokesperson for a number of motorcycle apparel/accessories manufacturers.
This conversation is like two old buddies shooting the shit for an hour, name drops, brand drops, and good old fashioned “war stories” are what this episode is all about.

Standing in a field in Pasco, Washington discussing harvesting potatoes and socializing the current state of employment and work ethic in the food and service industry, Chef Brian Duffy was struck by the words, “I don’t want to know how much my employees make.” It made me stop and ask, “What does that even mean????” Well, it means that Chef Ford Fry was more concerned for the lives and happiness of his staff then he was with, “How much am I paying this guy? Am I getting my moneys worth?”
Ford is a Texas born, Vermont educated good dude who just so happens to own and operate fifteen restaurants after backing away from the kitchen because he felt a connection with the front of house that allowed him to create on a higher level than just the food. It was a connection that made a direct impact to his guests and his employees.
Chef Fry has some great philosophies about the industry and the current state in which we are all witnessing. Hope you guys enjoy this great conversation!

Duffified Live: Retired Army Sergeant & Hero Adam Keys

Five years ago, Chef Brian Duffy was at an event for cystic fibrosis when he met an individual who made an impact on him. During the event, I was introduced to a gentleman named Adam Keys. As I approached Adam, I noticed that Adam was in a wheel chair. I was introduced and when I reached out to shake Adam’s hand, I realized he had a bottle in his right hand and there was no left. Adam reached out his arm and I proudly shook it.
We talked for a while about my time on Bar Rescue, his time in the military, and the day that led to the amputation of both legs and his left hand.
Over the last few years, I’ve followed Adam’s progress and a few weeks ago, a social media post grabbed my attention and I had to speak to him. This episode is the culmination of that!
Please listen to this episode. Learn about the willpower and determination of this truly wonderful dude! You’ve got to hear the story of how he was the remaining survivor of an IED blast that took the lives of five other warriors, including his best friend, and his pursuit to carry on the spirit of all of them and to honor them.
Adam will be climbing Mt. Kilimanjaro in a few weeks and we will hear all about the struggles and training that Adam will be facing.

When was the last time you spoke to a person who has done some really cool stuff? Imagine being 14 years old and cast in a movie that will span the test of time. A movie that, at the time just kinda sounded fun, opened the door to becoming a teen icon. Well, Chef Brian Duffy got to spend an hour talking with actress, model, singer, and fashion designer, Tami Erin. She is best known for her role as Pippi Longstocking in The New Adventures of Pippi Longstocking. It was released in movie theaters worldwide in 13 languages by Columbia Pictures
Tami is a woman on fire! Her life involves travel, eating an 80% raw diet and a 20% conventional “I eat what I want” diet, and EXPLORING LIFE TO THE ABSOLUTE FULLEST. Now in her 40’s, Tami travels quite a bit, whether it be for an appearance, a private lunch (available on her website), or her new love of the island of Belize. She is ready to embark on the next level of her career.
No longer the 14 year old pig tailed, freckled ginger from 1988, she has deciding to take her career to a new level, an Rated R level, and is moving into a new level of photos and videos. Sparked by the release of a sex tape five years ago, she has decided that she wants to move into more of a Dominatrix and aggressive role and out of the G-rated game.
Chef and Tami discuss her sex positive life and her website business, which offers everything from signed copies of the movie to private dinners and dates. (The “date” thing may be put on hold now due to her newest relationship.)

Chef Linkie Marais is a South African Native turned 20 year United States Fanatic! I met Linkie in an airport in Amsterdam. We were all catching a connecting flight to fly to the Middle East on a tour for The Messlords. Imagine seeing a 5’9″ blonde chef walk into the spa where you’re able to take a nap and get a massage at the same time.
Linkie has traveled the world for food and has seen her share of fun and excitement. Being the chef for a yacht, she gets the best of both worlds when it comes to cooking and traveling but being a contestant on The Food Network’s “Next Food Network Star” in 2012 showed her a world of reality television that has assisted her career in many ways. Her new celebrity has led her to be able to host food events and cook all over the world. With her signature accent and knowledge, she has been able top pair up with Green Egg as one of the grill masters and utilize their products to bring you some of her flair!
From a trip top the Middle East to a trek through Alaska, this episode touches on all sorts of fun. If you don’t know Linkie…..you will now!

This week’s show was something that Chef Brian Duffy has been wanting to do for a while!! One day chef was flipping through Instagram & saw a video of a beautiful young woman interacting with a young girl who was about 3 or 4.
This little girl had such a look of happiness on her face as she looked at this young woman because they both had a similar appearance… 1 hand.
Chef Brian Duffy immediately contacted Nicole Kelly and never imagined how much he would love talking to someone! A conversation about everything from school in Iowa and growing up in a town of 10k people to college and having to navigate the world with only one hand!
Nicole Kelly stepped into the roll of public figure after winning the 2013 title of Miss Iowa and going on to compete at the 2014 Miss America Pageant. She gained attention for being one of only a few competitors to have ever competed with a physical disability. After working for a year as Miss Iowa and traveling across the country to advocate for those living with a disability, she signed with a professional speaking agent and started her own business: Nicole G. Kelly, LLC. Nicole has proudly spoken at hundreds of K-12 schools schools, given educational lectures at universities across the country, and served as the emcee at the Kennedy Center’s celebration for the 25th Anniversary of the Americans with Disabilities Act.
It is Nicole’s mission to educate as many people as possible about those living with a physical difference. Nicole is a proud ambassador for CoApt, an advanced control solution designed to enhance the functionality of a powered myoelectric prosthesis for those with upper limb loss or limb difference. This summer Nicole completed her masters degree in broadcast journalism at Northwestern University’s Medill School of Journalism.

Chef and Chris have been friends for 20 years and their relationship spans from the days when a young lad named Brian Duffy was nothing more than a young struggling chef with a family at home, a tremendous amount of drive, and a twinkle in his eye.
For the past 21 years, Braccili has run The Rusty Nail on the simple premise of treating people with respect, removing angry people from both his life and his bar, and bands. Lots and lots of bands.
Big Daddy hasn’t only created a culture that is rich in hospitality, he has also created a legendary dive bar where EVERYBODY knows your name. We have a long talk about how to treat people, what you can do as an operator to create an environment and a culture that not only retains employees but makes your guests and entertainers continuously return, and so much more.
Chris is a great guy with a HUGE personality and a great sense of being a quality individual. I’m proud of him for his successes, thankful for the opportunities that he has given to young bands, and even to me when I was looking for extra work. He runs his property and treats people well. It’s a great model for others to follow.

Chef LOVES info! So, when he wants to know more about the process of distilling, he talks to his buddy Robert Cassell of New Liberty Distillery. This week, the conversation goes from beer into whiskey and even a few stories about riding Harleys, travel, and digs into the science and knowledge of what a “Master Distiller” does.
In 2004, Cassell and his uncle founded Philadelphia Distilling and he’s never stopped innovating. His success enabled him to move on and establish a whiskey distillery called New Liberty Distillery in the Kensington neighborhood of Philadelphia in 2014. He also gone worldwide and become Master Distiller and founder of Connacht Distillery in Ballina, Ireland.
Cassell also has his Degree in Nuclear Medicine.

This chick…. Such a wonderful person! I have followed Danielle Harrington on Instagram for a while now and have watched someone transform themselves into a walking machine. Her drive to get into the ring after so much adversity has propelled her to a super comfortable place in her world. While managing a Tiger Schulman studio with her boyfriend as the owner of the gym, she made a decision to take things to the next level and start training for one of their competitions, literally shedding weight and building a body of which could handle multiple kicks and punches while at the same time retraining the brain to think & train like a fighter.
This is a great episode with a woman to watch. Will she move further along in the ring or was it a milestone that she no longer feels the need to reach for?

We discuss what it was like being the inside line during the search and apprehension of one of the most hated kids in America…. we’re talking about 19-year-old Dzhokhar Tsarnaev, the younger brother of the “Boston Marathon Bomber” and possible FBI informant Tamerlan Tsarnaev.
Chef and Jim talk about all things family, Police, growing up in Boston, and what the life of a cop was like before and after reality TV. Jim is a down to earth guy who has a few opinions on things that have affected us all in the past few years. He also talks about how he was partnered up with the cop who shot one of his buddies prior to him joining the force.
The conversation takes a few turns when Chef is asking questions about life in the line of duty, some of the worst scenarios that he has seen, as well as what it was like to be standing there for three hours while the suspect of the Boston Marathon Bombing was hiding under a tarp on a boat.

Luke Soderling. A Master Plumber, a father of four boys, a husband, and a guy who headed to the Amazon for sixty days to survive. Well, that’d be pretty cool if it was 3 people but it was one dude and he wasn’t even a survivalist!
Luke Soderling is a guy from Northern Minnesota and figured he could do it so he signed up for the “The Wheel,” a reality show that dares six participants to survive in six distinctly grueling landscapes across South America. With every turn of the wheel, each survivalist is dropped into a new isolated location, exposed to the world’s deadliest terrains including freezing tundra, rugged mountains and treacherous rain forest. Participants don’t know when or why the wheel will turn nor that their stint at each spot is determined by the rotation of the moon. Equipped only with light survival packs and SOS devices that can be used at any time to quit the challenge and call for help, they must fend for their lives by procuring food, water and shelter. Then, when the wheel turns again, they will be thrust into a new location, forced to use a completely different set of skills to survive.
We have a great chat about family, reality TV, the psychology behind the shows, what happens when your isolated in these challenges for 60 days, the conversation tales turns and winds throughout what it was like to leave his wife of 13 years, the family business, the comforts of home and his four boys.

In the restaurant world, there are two types of people…..those that want & those that do. I am lucky enough to meet the third person this that do because they want it! Chef talks with two very dynamic & empowered women this week, Carla & Christine Pallotta, sisters from the north end of Boston who were raised in the typical old school Italian fashion…..by the family.
Salon owners for over twenty years and then BOOM. Restaurant owners. They opened up Nebo with rave reviews & phenomenal classic Italian food, Mom & Grandmom’s recipes, nonsense of the “industry” per se, but they crushed it! This is what you do after you own a hair salon for over twenty years. You take that sense of hospitality, that sense of creative pride, the ability to take care of your guests, and you exceed the expectations!
Neither of them have been classically trained. They don’t have a “chef.” Most of their employees haven’t worked in the industry and it’s a blessing for the two sisters who are so proud of their heritage and neighborhood that they now own two successful spots.
We talked about family, pride, community responsibility, and the ability to truly take care of your guests.

This week, Chef Brian Duffy is joined by longtime television personality Phil Rosenthal, creator and host of “Somebody Feed Phil” on Netflix. The show is a classic style of travel, food, and interaction but…… this was different. It’s the type of show that made you feel all comfy and warm inside. It just gives you the feels. Chef sent a tweet, next was a phone call, and now he’s on Duffified Live.
Born in Queens, Rosenthal moved to Los Angeles in 1989 and went on to write for hit shows “Down The Shore” and the award winning show “Coach” before creating a little TV series starring Ray Romano for CBS called “Everybody Loves Raymond” in 1996. “Everybody Loves Raymond” would go on to be nominated for over 70 Emmy Awards, winning 15 including two for Best Comedy Series in 2003 and 2005. He also co-wrote “America: A Tribute To Heroes,” the 9/11 telethon that aired on all for networks in 2001 and authored the book “You’re Lucky You’re Funny: How Life Becomes A Sitcom.”
This conversation leads into finding out about Phil and what makes him tick. The guys talk about his career in Hollywood and this new creative spin on traveling and digging deep into the culture, the people, and the food. Also, Chef finds out Phil’s wife, Monica Horan, is from a Philly suburb and the mutual friends that they share.

A few years ago, Chef Brian Duffy was watching television and he heard about this new company called Kind Financial that provides seed to sale software and regulatory technology that monitors cannabis compliance from seed to sale and through to the bank which was endorsed by Microsoft. The thing is….. he knew the founder of the company, David Dinenberg, from elementary and middle school. His interest was now peaked. Chef followed the company and decided that David would be a great guest for the podcast.
The conversation ensues and goes from the business, the legality, the popularity, and the future to back in the day talk to middle school and raising kids on the East Coast versus the West Coast.
It’s a fun conversation between two old friends that picked right up like they just talked yesterday.

As a Philly guy, the traditions & shenanigans that I have experienced for New Year’s are a part of me that I’ll never ever let go. Philadelphia, known for cheesesteaks and pretzels, also has another great tradition….. PARADES!!! From one of the oldest St. Patrick’s Day parades to the oldest and largest folk parade, The Mummers made their first organized strut on January 1, 1901 and since then, the comics, wenches, string bands, and fancies have entertained the historic, inebriated & hungover for years.
This week, I get to speak with Kevin Young, a friend, a teacher, and the captain of this year’s first place Comic Division for the 2018 Sugar House Casino Mummers’ Day Parade. Kevin is a guy with a mission to make things great and to let the world (or at least his neighbors) know that the “2 Street Stompers” are here for good!
As a captain, Kevin is involved in so many aspects of the planning for the Parade. We talk about all of that plus the history and tradition that is the Philly Mummers’ Parade!

He’s also been the Executive Chef for the Hilton Hotel chain.
Keith talks a bit about his New Orleans roots shining through his dishes and how he’s living the dream of no rent while carrying the burden of all else attached.

Duffified Live: Former NFL LB Keith Bulluck

This week, Chef talks with former NFL linebacker Keith Bullock about football, food, family, and even a little Vegas!
Keith, drafted 30th overall in the 2000 NFL Draft by the Tennessee Titans, was a middle linebacker for the team for ten years and finished his career with the New York Giants. After spending his first two seasons as a backup and special teamer, he became a starter in 2002, made a Pro Bowl in 2003, led the NFL in tackles with 152 in 2004, and led the Titans in tackles five times.
In other words, the dude is a STUD.
Also on this week’s show, Chef Duffy discusses Andrew Zimmern’s acceptance speech at the 2017 James Beard Awards, where he and his brother were nominated for twice!
