    Saison has come to be defined by just the handful of commercial brewers who make it. But historically, “saison” was an umbrella term covering a broad spectrum of flavors. Modern brewers are now discovering ways to drive different aspects of the yeast that is the hallmark of saison.


    Ironically, its thinking about water, grains and hops driving these yeast flavors. But speaking of yeast, while “a Belgian saison strain” is a common phrase, in fact, Brettanomyces is often key in making the style.

    The Salvo Advantage - How Peaceful Side Brewing is Adding Flavor Without Sacrificing Beer Loss. Jul 28, 2026

    In this bonus episode of the All About Beer Podcast, Chris Meadows, Head of Brewery Operations at Peaceful Side Brewery in Maryville, Tennessee, shares how Hopsteiner’s advanced hop products helped the brewery reformulate two flagship beers while achieving improvements in cost, yield, shelf stability, and flavor.

    IPA’s are a double edge sword for most breweries. IPA’s sell the most but are often more expensive to make and distribute sustainably. By tweaking a few key ingredients, Peaceful Side Brewing was able to reduce production cost and routinely gain an additional 1.5 to 2 barrels of finished beer from each production run.

    By adding Salvo® and SalvoPlus® the American IPA’s dry-hop load fell from approximately 60 pounds into the 40-pound range. With less vegetative material entering the brewery, Peaceful Side experiences smaller trub loads, improved wort and beer recovery, easier cleaning, faster transfers and less water used for rinsing.

    Most importantly, the beer has improved. In blind internal tastings, participants consistently preferred the reformulated versions. The American IPA gained a clearer grapefruit-and-citrus direction, more balanced bitterness and a cleaner finish without the lingering astringency of the previous recipe.

    Meadows also credits the reduced hop load and shorter tank exposure with slowing oxidation and keeping the beers tasting fresher for longer.


    “Consumer response has been overwhelmingly positive, and sales have increased—even though Peaceful Side never promoted the recipe changes to the general public,” says Meadows.

    One Iconic Beer: New Glarus Wisconsin Belgian Red Jul 20, 2026

    In 1993, Deb and Dan Carey released Wisconsin Belgian Red, the third beer they made at their new Wisconsin brewery, New Glarus. It was one of the country’s first “sour” ales, and it created quite a stir, and not just because it was so unusual. The Careys weren’t on a momentary flight of fancy. Rather, Dan Carey, the brewer, had been experimenting with wild ales for six years, and they intended Wisconsin Belgian Red to be a key part of their portfolio. Thirty three years later, it still is. On this episode, we’re going to hear from Jeff Sparrow and Dan Carey about how these old, almost extinct methods jumped the ocean to the United States to become an enduring part of craft brewing. No beer was more critical in developing interest in wild ales than New Glarus Wisconsin Belgian Red, and this is its story.
